Summer has returned to the capital, revealing the perfect plan to enjoy the coming months: a rooftop terrace, by day or by night, the best cuisine and the most refreshing cocktails. This is where the rooftop terrace on the seventh floor of Four Seasons Hotel Madrid comes into play; a special setting of luxury and gastronomy that, for the second straight year, has become the place to be for a unique experience, where Dani García's recipes are paired with the exotic creations of the restaurant's team of mixologists.

For the new summer season, Dani Brasserie is launching a new menu with lighter and more seasonal proposals, which will be available both in the restaurant's main dining room and on the rooftop terrace. This Andalusian chef is kicking off the renewed menu in his particular "snack bar," with dishes that are served all day long, such as natural oysters, Iberian ham croquettes, guacamole or smoked salmon prepared tableside, Robuchon-style prawns or the latest novelty: Dani's Club Sandwich, prepared with free-range chicken, Norwegian salmon, Baeri caviar and hollandaise sauce.

The proposal continues with starters that prioritise fresh flavours, especially suited to the season, such as tomato tatin with cacio e pepe parmesan ice cream, poached jumbo asparagus with creamed corn, mascarpone, and Iberian "lardo" or the "Almond Freshness" soup with white prawns, herring roe and cabello de angel. All of these are joined by the establishment's signature dishes such as the steak tartar prepared tableside or the famous Tomate Nitro, the undisputed icon with which Dani García was awarded three Michelin stars in 2018.

As regards fish, Dani Brasserie's menu features new recipes such as hake with gazpachuelo and sautéed soybeans or grilled lobster with Palo Cortado burre blanc and caviar. Naturally, the section dedicated to Barbate tuna has been retained, where this true gem of the sea can be found in dishes such as charcoaled avocado and red tuna belly, red tuna descargamento with yellow bell peppers and o'toro sashimi. In addition, the spectacular Rossini burger will be joined by new dishes in the more meats-oriented section: grilled pigeon with cocoa and glazed endive and the exquisite wagyu kobe A5 loin.

"For this new summer menu, we have proposals created exclusively for Four Seasons Hotel Madrid, such as the Dani's Club Sandwich or pigeon with cocoa, where the excellence of the product and the interaction between French and Andalusian cuisine always prevail. We seek maximum enjoyment for the international cosmopolitan client and the Madrid client," says Ismael Paul, head chef at Dani Brasserie.

And finally, a visit to Dani Brasserie must include the dessert section of the menu. Suggestions include The Floating Island, with white peach sauce and sorbet, gooseberries, caramelised sliced almond and yellow peach brunoise sauce; Dani's Cheesecake with strawberries and EVOO; gianduja chocolate with Arabica coffee ice cream; and griottines crêpes flambéed tableside.

This summer, the Dani experience is the perfect choice for any time of the day; the cuisine is complemented by the cocktails designed by the creative team of mixologists at Dani Brasserie. Inspired by Spanish art, culture, music and nature, these exotic cocktails pay tribute to great artists who have left their mark on the history of Spain, such as Sorolla, Dalí, Velázquez, Almodóvar, Sara Montiel and Gloria Fuertes.
