After being closed in August, during which time the team has been working on new ideas, dishes and concepts, the ISA, Asian-Mediterranean restaurant and cocktail bar of Four Seasons Hotel Madrid is reopening its doors to welcome a renewed gastronomic and cocktail proposal: flavour, innovation and the highest quality products are all reflected in a new menu.

A Sublime Gastronomic Range with New Stars

This new season promises to be exciting. The whole team has come together to reinvent the culinary approach and surprise everyone with a menu that promises a unique experience for the senses. Those who have already enjoyed the restaurant and those who want to be surprised will be able to sample outstanding dishes such as Wagyu Gyozas with Black Garlic, Red Hot Chilli Curry with Veal Cheeks and Tamarind or Japanese A5 Wagyu Beef from Kagoshima.

They have also added a new selection of nigiri and baos featuring surprising ingredients, such as the Curried Lamb Bao with Papadom Rice Crackers.

As a result, the ISA team has created a new menu in which the character of the dishes embodies the essence of the restaurant. It ranges from light snacks to complex culinary works of art where everything is possible: a selection of nigiris and starters is complemented by exquisite garnishes to accompany a meticulous selection of the best fish and meat; not forgetting the perfect ending, which includes a range of desserts where the classic sake rice pudding and a selection of mochis, a typical dessert of Asian cuisine, will never disappoint.

Sakura Cocktails: A New Pairing Proposal Featuring Unique Flavours

As part of its characteristic innovation, which also applies to its cocktail bar, the team led by Miguel Pérez, Head Bartender at ISA, is launching a new section on the menu: Sakura Cocktails - three new vibrant and flavoursome signature creations in which the effects of light and smoke play a fundamental role. Their essence, which fuses unique ingredients that come from nature, results in cocktails that are striking and full of personality and designed to surprise; from Yakult, based on Barsol pisco, strawberry yoghurt and elderflower, which automatically teleports one back to childhood, to the intense and slightly acid flavour of Kaze, where El Jimador Tequila is majestically blended with tangerine and green pea.

Friends of "the usual" will still be able to enjoy the minimalist flavours of ISA's pairing based on its signature cocktails based on Haiku (a type of short Japanese poetry that expresses the complexity of feelings in the fewest possible words), which is applied in a sublime way to its cocktails. Based on this concept, ISA’s bar serves nine elegantly designed creations, offering a range of flavours that progress from the subtle to the increasingly complex.

Once again, ISA has confirmed its transgressive and adaptive skills, this time with a new concept in which diners will be able to enjoy the possibilities of this unequalled gastronomic and liquid approach that has characterised it for so long, all thanks to a team capable of creating an ode to the best products, presented in an innovative and unconventional way - two pillars that have defined success at ISA since it opened just under a year ago.

Its new menu is a succulent contrast of textures and flavours with hints of Asian-Mediterranean fusion. The culinary team has prepared surprising dishes where mystery is the common thread that flows through the quality of the products, resulting in meals that challenge the most succulent palates. Without losing its essence, ISA maintains an impressive and succulent range of cocktails under the direction of Miguel Pérez, renowned as one of the best bartenders on the national stage.
