When fine art meets pastry, pure magic happens. This is the story of Executive Pastry Chef Riccardo Menicucci, a fun-loving, charming Italian, who joined the top-tier team of professionals of Four Seasons Resort Maui in November 2018 after working in several Michelin-starred restaurants.

Menicucci grew up surrounded by art, culture and food in Florence, Italy, and cooked in a restaurant owned by his parents. After spending years in art school, he realised, “Instead of painting and graphics, I could express myself artistically through pastry - especially through fine dining and plated desserts. I also really enjoy the chemical and mathematical approach to the laws of pastry.”  

Now, at Four Seasons Resort Maui, he sparks the curiosity of guests by pairing simple flavour profiles with modern pastry techniques and presentations. According to Menicucci, “I like my desserts to be playful yet refined, and to wow the guests because they’re so delicious.”

Menicucci hopes to remain curious and creative throughout his career, and also takes his role as a leader and a mentor seriously. “I want to give all of my knowledge to the pastry team, help motivate them, and help them grow as chefs,” he says enthusiastically.

What is his favourite dessert creation so far? His reimagined tiramisu at Ferraro’s Bar e Ristorante. “The traditional flavours of the tiramisu are there, but the presentation is a little more of a surprise,” he explains.  

Menicucci accepted his position on Maui with great pleasure. A fitness and outdoors enthusiast who loves hiking, CrossFit, soccer, spearfishing and freediving, Menicucci is finding his way around Maui just fine.

He can be spotted on his days off riding his motorcycle around town, looking for his next adventure.
