As a child in New York City, Molly Allen had dreams of becoming an actress and even studied theatre arts in college. These days, she sets the stage for world-class dining experiences at Four Seasons Hotel Nashville as Mimo Restaurant and Bar’s General Manager.

Molly’s career in hospitality began rather unexpectedly when she moved to Oahu, Hawaii. She needed a temporary job while she looked for a position in financial management, but she began serving at Four Seasons Resort Oahu at Ko Olina and quickly fell in love with it. During her year-long stint at the Resort, she led the launch of the wine program at the Hokulea coffee and wine bar and served as its manager.

Her newfound hospitality career took her all over the country with various hotel brands. She lived and worked in Colorado, Texas and Nebraska before returning to Four Seasons to join the pre-opening team of Four Seasons Hotel Nashville as the General Manager of the Hotel’s flagship restaurant, Mimo Restaurant and Bar. Helmed by Michelin-starred chef Aniello “Nello” Turco, Mimo will be open for breakfast, lunch and dinner, with a lively bar that features live music, private dining rooms for intimate events, and a terrace for al fresco dining along First Avenue.

What Molly loves most about working in food and beverage is the universality of a shared dining experience. “Food and beverage is an international language,” she says. “When you watch someone enjoy good food and good beverage and good atmosphere, you understand how they feel. You share an experience regardless of the cultural or language differences.”

Molly is eager to welcome guests from all walks of life into Mimo Restaurant and Bar and create lasting memories for them, not just because of the exquisite culinary offerings, but because of the people on her team. “Mimo is a place where Southern Italian meets Southern hospitality,” says Molly. “From the energetic buzz of the bar to the world-class cuisine prepared by Chef Nello to the thoughtful staff, we are confident our guests feel welcome during every stage of their visit and find a reason to return again and again. We want Mimo to be a haven for locals and tourists alike, with an all-day buzz and lively atmosphere by night.  I love the feel of Mimo’s energy, and bringing outstanding Italian dining to our guests.”

A born-and-raised New Yorker, Molly has fallen in love with city life in Nashville. Since moving to the city in the spring 2022, she’s spent a lot of time trying new restaurants and bars and exploring the diverse musical offerings. Attending her first CMA Fest was a highlight, and she’s quickly becoming a regular at some of Nashville’s best honky-tonks. “I’ve lived in many places, but Nashville has quickly become one of my all-time favourites,” she says. “As a tried-and-true New Yorker, to fall in love with another city almost feels like a betrayal, but Nashville is truly something special.”
