Born in Lucca, Gabriele Del Carlo discovered wine when he was 18 years old. His hotel business training led him to small Tuscan restaurants, which, paying him with wine bottles, gave him a real taste for his region’s grape variety. He therefore chose a sommelier specialisation in school, before joining a little “vineria” in Lucca, where he learned about Tuscan wines and discovered what would soon become one of his greatest passions: Champagne. A few years later, he joined restaurant Cracco’s team as a commis, before honing his sommelier skills in the very prestigious Enoteca Pinchiorri in Florence.
Gabriele first entered the iconic restaurant Le Cinq at Four Seasons Hotel George V, Paris in 2010, without speaking a single word of French. The team of sommeliers and especially Eric Beaumard and Thierry Hamon taught him everything about Moliere’s language and the French savoir faire.
He was then appointed Chef Sommelier at Four Seasons Hotel George V’s Mediterranean Restaurant Le George in January 2017. Already feeling at home, he immediately started developing a dedicated wine list, full of his beloved country’s bottles.
