Four Seasons Resort The Biltmore Santa Barbara, a AAA Five-Diamond award recipient and California’s premier Four Seasons resort, welcomes vegan chef and wellness expert Leslie Durso. In partnership with the Resort’s Executive Chef Michael Patria, Chef Durso brings plant-based options to the Resort’s various menus introducing a selection of vegan options that showcases the bounty of Santa Barbara. In addition to Durso’s recipes, the Resort will host its third annual wellness retreat, “Well Now” on Saturday, February 1, 2020 in partnership with Durso and several likeminded wellness experts. Durso is a leading figure in the vegan and wellness communities for her illustrious career that includes several national television cooking segments and the promotion of a healthy lifestyle.

This January, guests can enjoy vegan and plant-based offerings at all Resort restaurants, which include Bella Vista Restaurant, Tydes Restaurant, Coral Café, Ty Lounge and Fins. The collaboration between Chef Durso and Chef Patria features menus that highlight both the bounty of Santa Barbara and each restaurant's ethos. Featured menu items include figgie toast with sourdough, cashew cream and fig; lasagna with walnut bolognese, béchamel, cherry tomato and basil; portabella picatta with spaghetti squash, caper-“butter” sauce; beet tartare with saffron “yolk,” cashew horseradish cream and endive; plant-based cobb with tofu, smoky mushrooms, cherry tomato, grilled corn, avocado and vegan ranch; TLTA with tempeh bacon, heirloom tomato, avocado, butter lettuce and vegenaise; and pumpkin cake with aquafaba meringue and candied pepitas.

In addition to the menu updates, Durso and The Spa welcome guests to an exclusive event on February 1, 2020 featuring dishes from Durso’s vegan offerings at Bella Vista Restaurant along with yoga, presentations, an interactive meditative journey through sound and more. This year’s “Well Now” event begins with an intention setting with energy healer and meditation teacher Jona Genova, followed by Vinyasa Flow Yoga on Corc Yoga mats. Modern Feng Shui master Dana Claudat will host an hour-long talk followed by a special presentation by Durso as her lunch items are presented and enjoyed. Guests have the opportunity to hear from Vega Co-Founder Brendan Brazier before a “Spa Minute” for a moment of relaxation. To conclude the day, Murray Hidary, the creator of MindTravel, will take guests into a transformative journey through sound.
