Born and raised in Mexico City, Alfredo Sanchez became an aficionado of food and beverage at an early age, inspired by youthful travel around Mexico with his grandfather. At 15, he took his first job in a restaurant – “no drinking, I was just in administration, but I paid attention to what was going on behind the bar” – and by 18 he had become a bartender for popular brands such as Tequila Sauza and Casa Domecq. He later moved to Puerto Vallarta and then studied at the Mexican Academy of Tequila, emerging certified as a Tequila Expert. “That’s a big title in Mexico, so I always preferred to go by ‘aficionado’,” he recalls with a laugh. “My main job was to share tequila culture and expand people’s knowledge. The experience can be so magical.”
In 2006, Sanchez joined Four Seasons Resort Punta Mita as a Bartender and advanced to Tequila Barista, building a collection of some 200 tequilas from across the country. From there, Sanchez joined the team at Four Seasons Resort and Club Dallas at Las Colinas as Bar Manager of the Resort’s new Outlaw Taproom.
Now, at Four Seasons Rancho Encantado, Sanchez oversees the Resort’s signature restaurant Terra, which offers seasonally-changing menus featuring innovative dishes that blend fresh, local ingredients with inspired worldly cuisines - as well as Terra Bar’s inventive beverage program with an extensive, ever-changing menu of signature, handcrafted cocktails, local brews, beer, cocktails and wines.
Sanchez has travelled widely with Four Seasons, including tours to Four Seasons properties in Hong Kong, Chicago, San Francisco, Buenos Aires, New York, Bogota, Mexico City and Toronto. He always arrives with “a lot of homegrown ingredients” to give bartenders a better understanding of how people work in other parts of the world. And he always takes something away. “It’s just like what I do with guests and locals here in Santa Fe - share my knowledge and the best possible experiences.”
When not managing Terra, Sanchez enjoys visiting bars and restaurants in Santa Fe, across New Mexico and beyond. “This is a fun state with a rich culture and a lot of options for someone with a passion like mine,” he says. “I like spending my downtime discovering new ingredients and learning what to do with them.”
