New Summer Menu Debuts at Proof, an American Canteen at Four Seasons Resort Scottsdale
Vibrant seasonal flavours, signature specials and weekly live music set the stage for summer fun
For a taste of summer, head to Proof, an American Canteen at Four Seasons Resort Scottsdale at Troon North for a fresh new menu of flavours with a home-style twist, served up in a casual, welcoming atmosphere.
“Summer days call for fresh flavours, and lighter fare,” says Proof Sous Chef Roxana Flores. “In Proof, we are all about balance. We created a menu featuring specialty lighter items – including vegetarian options – while staying true to our roots with signature meats and poultry from our smoker.”
Embrace Meatless Mondays with menu offerings focused on vegetarian dishes, in addition to Proof’s full menu of familiar favourites. Additionally, every Thursday through Sunday, join Proof for Smokehouse Specials featuring highlighted meats prepared on the smoker, accompanied by a signature cocktail for purchase. Live music also is offered every Friday and Sunday evening throughout the summer
New light bites and starters include crab and shrimp wraps, with vegetables, olives, pickled jicama chips, bibb lettuce, herb salad and housemade hot sauce. Taking full advantage of the smoker, the dinner menu offers smoky beef short rib egg rolls, with slow-smoked short ribs, caramelized onion, cabbage, carrots, shitake mushrooms and dry cherry soy sauce. New dinner entrees also include the prime flat iron steak, accompanied by a crispy potato and parmesan waffle, arugula salad, shaved parmesan, shaved radish, grainy mustard sauce and signature Proof steak sauce. The BBQ half chicken, fresh from the smoker, is served with preserved lemon and roasted garlic puree, carrots, fingerling potatoes and coriander chutney.
For a lighter summer lunch or dinner, the new vegetarian caesar offers baby romaine wedges, lemon vinaigrette, vegan caesar dressing, parmesan crisp, capers, black garlic and piquillo pepper jam. Grains n’ things features a warm buckwheat and black rice bowl, tomato harissa salsa, roasted summer squash, heirloom cauliflower, baby carrots, chards, charred shishito, pepper jam, citrus chimichurri and toasted pepitas. Top it all off with a taste of summer and the strawberry lemon curd tart, with strawberry sauce, mint whipped cream, caramelized rice cereal and lemon agave glazed berries.
