A Quintessential Peranakan Weekend Afternoon Tea by Four Seasons Hotel Singapore and Candlenut

Savour the nostalgia and heritage of Peranakan cuisine at One-Ninety Bar through elegant Straits-Chinese signatures and classics peppered with playful creativity
March 23, 2021,

Four Seasons Hotel Singapore and Candlenut, the world’s first Michelin-starred Peranakan restaurant, present a specially crafted Peranakan Afternoon Tea at One-Ninety Bar, available all weekends of April and May 2021.

In a collaboration anchored in culinary craftsmanship and timeless tradition, Candlenut Chef-Owner Malcolm Lee delves deep into his own Peranakan heritage for inspiration. Letting his passion shine through in all that he does, Chef Lee presents a sophisticated menu of Straits-Chinese dishes elevated with astute twists while preserving the essence and complexities of the traditional cuisine.

Relish an assortment of dainty sweets including kaya and butter toast; kueh salat; kueh bingkah; buah keluak tart; Chinese-style butter cookies; and lemongrass cake that evokes nostalgia alongside savoury treats such as kueh pie tee; otah toast; pang susi; and the exquisite roti jala, a lacy coconut crépe paired with Chef Lee’s Mum’s signature chicken curry.

And don’t forget Executive Pastry Chef Audrey Yee’s freshly baked vanilla and pandan scones that are accompanied by homemade pineapple-gula melaka jam; strawberry-rose preserve; and Devonshire clotted cream.

Local-Inspired Cocktails

The journey continues with a trio of locally-inspired craft cocktails by Bar Manager Gabriel Carlos. Kopi-O is an aromatic blend of local coffee-infused Mancino vermouth, 12-year Auchentoshan Scotch whisky and house cherry liqueur. Just like the traditional coffee, this cocktail will get one going throughout the day with its robust taste of coffee, chocolate, spices and hints of vanilla

Made with clarified milk punch and Altos tequila, the Pandan Kueh is a playful rendition of the well-loved combination of pandan and coconut widely adored in Straits cuisine. Elevating these familiar flavours discover the refreshing, distinctive flavours of pandan and coconut in this beautiful green tint cocktail infused with nuances of lychee and chamomile.

For bubbly lovers, relish the Instagrammable Kampong Fizz. Inspired by the native butterfly pea plant, this unique floral and citrusy gin-based elixir is an elegant yet cheeky beverage that will have one yearning for another sip.

Complete the afternoon with the Candlenut signature tea blend - an exquisite blend of oolong and butterfly pea flower with fragrant notes of jasmine and pandan, a fine selection of specialty Gryphon teas or choose to have craft Lavazza coffee freshly brewed at the table.

Available on the weekends of April and May 2021, the Peranakan Afternoon Tea will be served at One-Ninety Bar from 2:00 to 5:00 pm.
