La Dame de Pic London at Four Seasons Hotel London at Ten Trinity Square announces the appointment of Élise Mérigaud as Head Sommelier.

Born in Limoges, France, Élise studied hospitality at Lycée Hôtelier Jean Monnet where she realised the importance of wine within the hospitality industry and its place in French culture. Deciding to specialise in wine, Élise went on to train as a sommelier at Lycée d'Occitanie et de Tourisme, Toulouse, and then after graduating, began her career as a Commis Sommelier at the iconic Pont de la Tour, London, where she rose through the ranks to become assistant head sommelier.

Following her love for wine across the world, Élise moved to Australia in 2016, taking up a role as sommelier at Merivale Felix Bistro and Bar in Sydney, working with more than 800 wines from Australia, New Zealand and France.

On her return to Europe, Élise gained Michelin star training as the assistant head sommelier at Gidleigh Park. However missing the buzz of the city, she moved to London in 2021 to be part of the opening team of 14 Hills, building a team and creating the wine list under the restrictions of the pandemic.

Most interested in the environmental approach of new winemaking procedures, and the stories behind the wine and winemakers, Élise enjoys an eclectic mix of classic and New World wines. Today Élise is the Head Sommelier at two Michelin-starred La Dame de Pic, taking great pride in pairing drinks to decorated Executive Chef Anne-Sophie Pic’s intricate dishes.

Working together with Head Executive Sommelier for Groupe PIC, Paz Levinson, Élise and Paz have opened the doors of the world of wine to their customers, where they consider each a meal journey and each pairing a narrative of discovery. Focusing on wines from the Rhone Valley, the home of Maison Pic and Anne-Sophie’s cuisine, La Dame de Pic’s wine list highlights the finest wines from the region and some lesser known bottles, ranging from the Swiss Alps to the Mediterranean plains of Châteauneuf-du-Pape.
