Juan Gaffuri Returns to His Roots as Executive Chef at Four Seasons Hotel Buenos Aires. Le Mistral menu combines local flavours with Gaffuri's international experience and personal touches.

After years abroad, Juan Gaffuri has returned to the place where his culinary career began ten years ago: Four Seasons Hotel Buenos Aires, now as Executive Chef.

At the Hotel's popular Le Mistral, Gaffuri's touch is evident in the menu, which infuses local ingredients with international flavours, as often prepared with classic French techniques as traditional Argentinian methods. Appropriately for a restaurant named for the annual winds that sweep the south of France, each course is themed on one of the winds that shape the Argentinian landscape: bora (appetisers), pampero (grilled specialties), siroco (mains) and zonda (sides).

Guests will find Chef's own version of the Latin classic Caesar salad offered alongside the French vichyssoise soup. Frogs legs are prepared in the Provençal style, while green bean soup gets a South American twist of lime. The country's internationally acclaimed beef is prepared to perfection, while Chilean salmon is also a favourite of regular guests. For dessert as well as breakfast, house-made dulce le leche is often on the menu. A selection of Argentinian and international wines enhances the dining experience.

Gaffuri also oversees menus at Le Dôme bar, which serves Afternoon Tea as well as cocktails; the spectacular Sunday Brunch in the historic La Mansión; and the many catered events hosted at Four Seasons Hotel Buenos Aires each year.

Coming Home

Coming back to the kitchen where he started, in his home country, is a dream come true.

Ten years ago, Gaffuri showed early promise at Four Seasons Hotel Buenos Aires, and was soon transferred to the former Four Seasons Resort Aviara in California to further develop his talent. In 2006, he moved down the coast to Four Seasons Resort Punta Mita, Mexico, where he was responsible for the highly successful opening of Bahía restaurant.

In 2008, he had the opportunity to be part of the opening team at BOURBON STEAK, Chef Michael Mina's restaurant at Four Seasons Hotel Washington, DC. Just a year later, he was promoted to Executive Sous Chef at Four Seasons Resort Sharm El Sheikh on the Red Sea in Egypt.

Gaffuri is very passionate and certainly a great addition to the successful team of Four Seasons Hotel Buenos Aires. Together with his wife Guadalupe, they come back to Argentina where they are parents of their first son, Jose Ignacio.
