Born in the south of France, Bruce Trouyet was raised very close to the Italian border and was exposed to some of the finest food cultures growing up. He started his expansive culinary journey by attending the country’s renowned Auguste Escoffier Culinary School to obtain three different levels of pastry degrees.  

He progressed in his craft by working alongside some of the greatest chefs in France, such as Meilleur Ouvrier de France recipients Yannick Franques and Philippe Jégo. After 12 years of working in France, he sought to expand his knowledge of pastry styles and flavours by seeking out international positions.  

He thus joined the Four Seasons family with his first placement in Bora Bora in 2013, then transferred to Four Seasons Resort Maui where he served as Executive Pastry Chef for nearly four years before accepting a new position at Four Seasons in Bangkok. He left the company for one year, but is proud and grateful to be back in such a unique place. 

His philosophy at work and with his team is guided by the same principles at home – driven by passion and love. While a chocolate addict, he surprisingly only samples his creations at work; at home, he never makes any dessert.  

Outside of the kitchen, he is a sport fishing fanatic and his hobby has taken him all over the world. His biggest catch was a marlin that weighed 485 pounds (220 kilograms). Bruce is also a big fan of backpacking and has set up camp in more than 20 countries, with more on more on his bucket list.
