Four Seasons Resort Rancho Encantado Savours the Fall Season with Big Green Egg’s Barbecue Specialist and Pitmaster

As fall settles upon Santa Fe, Four Seasons Resort Rancho Encantado is embracing the cooler temperatures with a limited-time weekend of flame-roasted meats with Chef Jack Arnold, Big Green Egg’s barbecue specialist and pitmaster, at Terra.

Taking place Saturday, October 21, 2023 from 5:00 to 10:00 pm and Sunday, October 22, 2023 from 11:30 am to 2:00 pm, Chef Arnold and Four Seasons Resort Rancho Encantado Executive Chef Andrew Fox are teaming up to host a unique barbecue dinner and brunch with a Santa Fe twist. The full lineup for the specialty menus includes:

Dinner Barbecue Menu

  • BBQ Dinner (USD 150 plus tax per adult) served family-style with American wagyu beef, grilled chicken, Good Ranchers Seafood and Point Reyes cheeses

Brunch Barbecue Menu

  • Grilled Wagyu and Eggs (USD 46) with grilled American wagyu, eggs any style and red-eye gravy
  • Jalapeño Sausage Hash (USD 28) with potatoes, green chile, fried egg and smoked tomato jam
  • Open Faced Steak Sandwich (USD 36) with cornbread, Chimayo chile and hollandaise duck fat fries

Additionally, Terra is featuring two cocktails to complement dinner and brunch, including the Antiqua and Famous (USD 36) with Chartreuse Yellow, Anejo Illegal Mezcal, Carpano Antica Formula Vermouth, lemon juice, egg white, black lemon and orange bitters for dinner, and the Ancho Morning Mojito (USD 20) with smokey ancho pepper liqueur, Blanco Illegal Mezcal, lime juice, cucumber, mint and club soda for brunch.
