Four Seasons Resort and Residences Vail Announces First-Ever Winter Wine Series in Partnership with Pinea Winery, Daou Family Estates, Fisher Vineyards, and Silver Oak Cellars

In the company of distinguished sommeliers and vintners, a mix of curated wine dinners and special tastings in Flame Restaurant will spotlight vintages and the pioneering  production techniques of vineyards out of California and Spain

Four Seasons Resort Vail announces the launch of its Winter Wine Series, the Resort’s first-ever seasonal partnership with a curated selection of the world’s leading winemakers in Flame Restaurant. The series commences in Flame Restaurant with a “Meet The Vintner” dinner hosted by Pinea Winery (December 23, 2023), followed by dinners with Daou Family Estates (January 19, 2024), Fisher Vineyards (March 1, 2024), and to conclude the series, Silver Oak Cellars (March 17, 2024).

“We are thrilled to bring these four wineries to Vail this winter and share our passion with our guests, residents, and local patrons. It is an exciting season as we are launching a new vibrant menu infused with international flavours at Flame that will complement these selections beautifully,” says Ellis Murphy, Assistant Director of Food & Beverage of Four Seasons Resort and Residences Vail. “This Winter Wine Series presents an exciting opportunity to showcase some extremely special vintages from leading winemakers in Spain and California, and likewise, to learn directly from guest sommeliers and vintners about each estate’s rich history, terroir, and viticulture.”

The announcement of the Winter Wine Series coincides with the launch of a completely reimagined menu at Flame Restaurant. Inspired by the culinary tastes of the Resort’s international clientele with a nod to the restaurant’s Rocky Mountain roots, this winter Flame introduces a dramatically reconceived culinary concept featuring a sophisticated mix of dishes infused with bold Latin flavours, and a superior assortment of Colorado fish, game, and steak. Signature menu items include the Sinaloa Spicy Aguachile, Crispy Apple and Watercress Salad, Portuguese Bacalao Potato Cakes, the “Après Pow for Two” Chipotle and Miso Baked Alaskan Cod and Taste of Colorado Rockies carving plate, and an exceptional selection of caviar.

“The culinary team at Flame Restaurant has long sought an opportunity to challenge our craft in this type of setting,” says Simon Purvis, Executive Chef at Flame Restaurant. “We are now putting the finishing touches on a series of special multi-course menus that I’m confident will artfully complement the unique personality of each vintage while paying homage to the local ingredients and gastronomic traditions of the regions in which each wine is produced.”
