At Yu Ting Yuan, the Michelin -recommended Cantonese restaurant at Four Seasons Hotel Bangkok at Chao Phraya River, this cherished tradition is honoured through a collection of handcrafted mooncakes—each one a tribute to heritage, artistry, and heartfelt connection. For 2025, Executive Chinese Chef Tommy Cheung unveils an exclusive new series, where timeless flavours meet personal memories, including the elegant debut of a Rose mooncake inspired by his mother’s favourite floral notes.
Drawing from time-honoured techniques and his own childhood memories, Chef Tommy reimagines the mooncake not simply as a dessert, but as a symbol of sentiment and connection. Each creation is crafted with precision and emotion—delicate yet expressive, familiar yet refined—echoing the spirit of Four Seasons hospitality.
“The Mid-Autumn Festival has always been close to my heart,” he shares. “Growing up, mooncakes were never just desserts—they marked moments of togetherness. This year, I’ve reimagined those memories through refined flavours, including a new Rose mooncake inspired by my mother’s favourite floral notes: delicate, graceful, and filled with sentiment.”
Chef Tommy’s 2025 collection is a study in balance—where heritage meets innovation, and every detail speaks to intention. From the gentle yield of the pastry to the layered complexity within, each mooncake is designed to linger in both flavour and feeling.
Each set of mooncakes are nestled inside a striking red gift box, its surface illuminated by a golden full moon—a silhouette of the Moon Goddess, Chang’e, woven into its glow. Inspired by the Mid-Autumn legend and the intricate elegance of Yu Ting Yuan’s design language, the box transforms each gift into a story in itself. Thoughtfully crafted to evoke reverence and joy, it’s an offering meant to be shared, cherished, and remembered.
A curated selection of flavours reflects Chef Tommy’s signature blend of tradition and imagination. From familiar favourites to bold new expressions, every mooncake tells its own story:
- Lotus Paste with Salted Egg Yolk – A timeless classic, featuring silky lotus seed paste and a golden salted egg yolk—symbolising balance and prosperity.
- Durian with Salted Egg Yolk – Bold and indulgent, pairing durian’s creamy richness with the savoury depth of salted egg.
- Custard with Salted Egg Yolk – Smooth and modern, this velvety custard melts on the palate, uplifted by a savoury centre.
