Chef Karim, also known as Avec Karim and celebrated for his passion, creativity, and artistry in the kitchen, takes diners on a transformative adventure where each dish tells a story of flavour, culture and art. Each Wednesday between 7:30 and 9:00 pm, he will present a gastronomic seven course menu, with dishes changing with the seasons.

What is the core story behind your limited-edition concept?
The "Tableside" experience is a flagship concept by myself “Avec Karim,” reflecting our journey through Egypt’s landscapes. The menu tells a story, blending local ingredients and cultural narratives into an immersive dining journey that evokes emotions. This residency at Four Seasons Hotel Cairo at The First Residence offers "A Meaningful Journey," putting Egyptian gastronomy on the map.
How would you describe the style of cuisine you'll be serving? Tell us about the menu.
After years of training at École Ducasse and working at Guy Savoy in Paris, one of the world’s top three-Michelin-starred restaurants, I came back to Egypt with a clear mission. I’ve always carried a deep passion for food, but more than that, a desire to elevate the culinary scene in Cairo. For me, it’s not just about serving food; it’s about crafting dining experiences that move people, that create a lasting emotional connection. My goal is simple, yet ambitious: to rediscover the richness of Egyptian gastronomy, reinterpret it through the lens of French culinary technique, and present it in an elegant, upscale setting. It’s about pushing boundaries, respecting tradition, and creating something truly exceptional for Egypt.
Is there a seasonal or thematic element to the weekly dinners?
The menu evolves with the seasons, uncovering new stories through seasonal ingredients. While the core theme remains, expect some surprises each week, reflecting our belief that the best journeys are unscripted.
Will the menu change on a weekly basis?
While the menu remains consistent within each season, I may adjust it based on new inspirations and discoveries, ensuring an evolving experience.
Are you planning on incorporating local ingredients? If so, what will be the main elements of ingredients?
We focus on sourcing from local farmers, foragers and fishermen, often selecting heirloom ingredients with cultural significance. These are transformed into a narrative that connects guests to Egypt’s landscapes and legacy.
What kind of dining experience do you want to create for our guests?
We aim to create an immersive, introspective experience where guests are invited to trust the process and explore emotions through food. It’s not just about dining; it’s about evoking memories and fostering connections.
How do you envision the plating and presentation? Will there be any theatrics or tableside elements?
Plating is an integral part of storytelling. Each dish, paired with the right ambience and attention to detail, creates a meditative experience that invites guests to lean into the moment.
Will you offer wine or cocktail/mocktail pairings to complement the menu?
We offer a fully dry beverage menu, with complex pairings made from house-ferments, infusions, and clarifications. These drinks mirror the artistry of our food, deepening the emotional narrative of the dining experience.
What/who inspired you to create this special experience/menu?
The menu is a culmination of life experiences, spiritual journeys, and cultural exploration. It’s shaped by collaboration with farmers, historians, and personal memories, creating dishes that evoke a deep emotional connection.
