Brasserie Margot Debuts at Four Seasons Hotel Atlanta This December
Parisian elegance meets Atlanta energy, offering reimagined modern French cuisine, artful cocktails, and unforgettable tableside moments
Four Seasons Hotel Atlanta is unveiling its latest culinary addition, Brasserie Margot, opening in December 2024. Designed to captivate guests with approachable, modern French cuisine and swoon-worthy cocktails, this intimately chic brasserie blends innovative culinary techniques, a charismatic mid-century aesthetic, and exceptional service for unparalleled dining in the heart of Midtown Atlanta.
"Brasserie Margot brings the charm and refinement of a modern Parisian brasserie to life, infused with Atlanta’s ever-evolving energy," says Nancy Chacon, General Manager of Four Seasons Hotel Atlanta. "Our aim is to create a welcoming space where locals and visitors alike can gather and feel at home while enjoying incredible food, drinks, and service - a true destination for memorable dining.”
At the helm of the kitchen is Executive Chef Jon Novak, whose wealth of experience spans globally renowned kitchens, including Michelin-starred destinations and critically acclaimed Tiny Lou’s in Atlanta. At the heart of his approach is working closely with trusted local purveyors and producers to source fresh, seasonal and distinctive ingredients that shape the menu.
"I like to think I bring a certain colour and mix to the menu - a blend of a worldly traveller’s perspective with a deep respect for traditional French cooking. You'll find dishes that might look classic on paper, but when they arrive, there’s a 360-degree flip - a modern elevation that still holds true to the essence of these traditional specialties," shares Novak. "It’s all about surprising diners in ways they didn’t see coming."
Guests can expect to find classic French staples such as steak frites, bouillabaisse, and foie gras, elevated with Novak’s unique perspective and inspired by techniques from the past, reimagined for today’s palate. The result is a culinary journey that invites exploration of multiple courses, leaving diners feeling satisfied but not weighed down.
Complementing Novak’s culinary vision is the artistry of Executive Pastry Chef Eric Snow. With a distinguished career that includes celebrated establishments such as Atlas and The Garden Room, Snow infuses precision and imagination into Brasserie Margot’s in-house bread and pastry program. Highlights include house-made baguettes made with a green apple starter and served with locally sourced, French-style butter from Banner Butter. Mornings introduce a grab-and-go bakery featuring croissants, danishes, and artisanal coffees brewed with a bespoke blend from local purveyor Rev Coffee Roaster, as the jewel-box bar transforms into a delightful coffee counter. In a nod to classic French dining, tableside dessert experiences offer a theatrical finale: Crêpes Suzette flambéed with Grand Marnier - a cherished indulgence, and just one of several distinctively delicious interactive moments at the brasserie.
Brasserie Margot’s beverage program is as inventive as it is refined, with signature cocktails crafted by Ashish Sharma, General Manager of Restaurant and Bar and an award-winning master mixologist. Drinks such as the Louvre Sour, a true masterpiece in a glass boasting a delicate mosaic of the Mona Lisa, and the smoky Clay Pot Negroni combine visual drama with indelible flavour. The cocktail program is paired with an extensive wine list featuring selections from multi-generational and woman-owned vineyards, with a focus on French and sustainable producers.
"From savoury to sweet, the result of our collaborative efforts is a menu that invites indulgence without feeling overwhelming," Novak notes, "a true celebration of French tradition with a modern touch."
To enhance the dining experience, Brasserie Margot features a carefully curated music program, meant to serve as the perfect soundtrack for every visit. Each selection has been deliberately chosen to harmonize with the brasserie’s evolution from morning to night. Blending French influences with a mix of sultry, playful, and high-spirited tracks, the playlist creates an atmosphere that resonates with the layered personality of the menu, drawing guests back to uncover new nuances with every return.
The interior of the brasserie, designed by the renowned Smith Hanes Studio, whispers instead of shouts, exuding a sexy, whimsical allure and poised sophistication. Muted tones, warm layered textures, and moody lighting evoke a sense of understated glamour, while subtle design touches - plush banquettes, rich wood accents, a deep colour palette, and hints of gold - lend a sense of familiarity, striking the perfect balance between Parisian elegance and Atlanta swagger.
Brasserie Margot will join the Hotel’s dynamic food and beverage offerings alongside the beloved Bar Margot, a collaboration with acclaimed restaurateur Ford Fry. The bridge between the two venues creates an elegant transition, guiding guests from Bar Margot’s lively, cocktail-driven atmosphere to Brasserie Margot’s inspired interpretation of classic brasserie dining. Together, they offer guests a range of experiences, each with its own personality yet seamlessly connected, inviting them to explore the best of both worlds.
Under the guidance of Mathieu Bruno, Food and Beverage Director and a native of France, and overseen by Hotel Manager Matthew Barber, Brasserie Margot is set to become a culinary gem in Atlanta.
"Brasserie Margot embodies our vision of exceptional dining - a space where every detail, from the thoughtfully crafted menu to the orchestrated ambiance, invites guests to celebrate and savour the art of modern French cuisine," shares Matthew Barber, Hotel Manager. "Whether for a special occasion or an evening out, it’s a destination designed to leave a lasting impression."
Brasserie Margot will serve breakfast, lunch, and dinner daily, along with weekend brunch. Grab-and-go options will also be available. Reservations open in late November 2024, and early booking is highly recommended to secure a table at this much-anticipated addition to Atlanta’s culinary community.
