The Power of Landscape and Light Speak to Westbank Grill’s Renovation at Four Seasons Resort Jackson Hole

Westbank Grill, the signature restaurant at Four Seasons Resort and Residences Jackson Hole, will be closing on October 14, 2018 for phase one of renovations.  The first phase of renovations will involve the removal of the restaurant’s large stone fireplace to be replaced with floor to ceiling windows. This will allow for greater slope side views of Jackson Hole Mountain Resort and Rendezvous Peak.  The renovation comes with much anticipation and excitement as it falls on the heels of the Resorts 15th anniversary.

“It was time to freshen things up, we are excited to create a new environment for our guests to enjoy our beloved Westbank Grill menu,” says Ed Gannon, General Manager.

Westbank Grill has been a favourite among guests and locals alike, offering a casual mountain steakhouse environment with an extensive wine list and local favourites. Just last spring its wine list was nominated by Wine Spectator for its excellence. The menu boasts locally inspired dishes from Jackson’s Vertical Harvest greenhouse and prime meats from local ranches. Though guests may see some modifications, Executive Chef Michael Goralski does not expect the concept itself to change.

“I don’t foresee any major changes to the menu as it’s a strong concept and well received among our guests. We are just giving our diners a fresh stage to play on,” says Goralski.

The renovation will be implemented by local architecture firm Carney Logan Burke, whose philosophy, "inspired by place," emphasises the power and importance of utilising Jackson’s surrounding landscape. This philosophy will light the key elements to the initial phase of Westbank’s renovation.

“The concept is really to draw on a stronger connection to the mountain with the removal of the large stone fireplace and addition of windows. It sets the tone for a more rooted and purposeful slope side, dining experience,” says Danny Wicke, Project Manager.

While the Westbank Grill is expected to reopen mid-December 2018, guests can rest assured that The Handle Bar, a Michael Mina restaurant, and Ascent Lounge will be open during the entire length of the renovation. Many of Westbank Grill’s breakfast and dinner specialties will also be available in Ascent Lounge during this time.  

Phase two is expected to begin in the spring of 2019, over the Resort's seasonal closure. This phase will speak more to the interior workings of the restaurant, along with the creation of a more functional space for the restaurant’s outdoor terrace.
