Four Seasons Resort Maui at Wailea Unveils KOMO, A Next-Generation Dining Destination Where Japanese Mastery Meets Hawaiian Hospitality

Four Seasons Resort Maui at Wailea announces its newest culinary addition, KOMO, where masterful Japanese cuisine comes alive in a setting that captures Maui's legendary glow. The intimate 50-seat restaurant, including its 14-seat interactive sushi bar, transforms a portion of the Resort's iconic lobby into a sophisticated dining space where precise technique and warm hospitality create an evening to gather and share culinary discoveries.

Under the direction of Tokyo-born Chef Kiyokuni "Kiyo" Ikeda, whose 25-year culinary journey spans from the mountains of Nagano to Morimoto's kitchen, KOMO's sushi-centric menu celebrates both time-honoured techniques and contemporary vision. Each piece of nigiri showcases masterful precision - from fish maintained under precise conditions to enhance its natural umami to custom soy sauce blended with three distinct varieties and house-made dashi to fresh wasabi hand-grated tableside, all exemplifying the attention to detail found throughout the menu. 

Inspired by the electric energy of Japan's legendary fish markets, the signature Mystery Box adds an element of discovery to the dining experience. Weekly deliveries from Japan’s renowned Kanagawa Prefecture's Misaki Megumi Suisan market introduce rare and pristine seafood varieties to diners - even Chef Kiyo doesn’t know what treasures he’ll find inside, allowing for spontaneous creativity at the counter and resulting in the ultimate omakase experience.

The thoughtfully curated beverage program features exclusive sake varietals such as the Sohomare Kimoto Junmai Daiginjo "Tuxedo" - made with the world's finest “Designation A” Yamadanishiki rice, exclusively served at KOMO on Maui - alongside premium Japanese beers crafted with the highest quality mountain spring water and inspired specialty cocktails. Each selection is chosen to enhance Chef Kiyo's menu while offering guests a taste of Japan's finest libations.

The culinary journey extends to an artfully crafted dessert program, where the Resort’s Executive Pastry Chef Ashish Thalakkat’s signature Hōseki-Bako "Jewel Box" presents delicate creations including Matcha Raspberry Roulade, Hibiki Chocolate Torte, Strawberry Sake Cheesecake, and Yuzu Cremeux Tart. Playful interpretations of beloved Japanese street foods including Taiyaki and Mochi Donuts are also featured on Chef Thalakkat’s menu. As a final touch, guests receive a daruma doll, a Japanese symbol of good fortune, adding a memorable keepsake of their evening.

Designed by Atelier Pond, KOMO's striking design draws inspiration from Maui's dramatic natural landscape. The lobby fountain serves as a central focal point, part of the resort's original design narrative tracing water's journey from mountain to sea. Bold, post-modern architectural elements incorporate materials that echo the island's volcanic origins – lava stone, richly veined quartzite, and marble create an interplay of organic textures. An intimate sushi bar acts as the restaurant's theatrical centrepiece, while rattan panels and strategic uplighting cast gentle shadows from surrounding foliage, softening the clean geometry and creating what founder Phillip Pond describes as "an open-air space where garden meets architecture."

The thoughtful design is enhanced by L'Observatoire International's lighting concept, which bathes the restaurant in warm golden hour tones. Strategically placed mirrors throughout the space capture and amplify Maui's legendary sunsets, creating an ambient glow that transforms the dining experience as day transitions to night.
