Chef Marcus Samuelsson Brings the Taste of MARCUS to Toronto


On Tuesday, March 29, 2022, Four Seasons Hotel Toronto will welcome world-renowned restaurateur and chef Marcus Samuelsson, and MARCUS Restaurant + Lounge Executive Chef Jason Morris to Café Boulud. Both Chef Marcus and Chef Jason will be joined by Chef Daniel Boulud and Café Boulud’s Chef de Cuisine Colin Henderson for a one-night-only collaboration dinner. For this collaboration, Chef Marcus will bring a taste of MARCUS Montreal to Toronto. Serving as Montreal’s hottest dining destination, MARCUS takes the traditional brasserie in exciting directions with a flavourful menu featuring everything from power breakfasts, brunch, and thoughtful dishes inspired by the land and sea, to late-night cocktails.
“Collaborating with Daniel is always such a pleasure,” says Chef Marcus Samuelsson. “He is such an amazing friend, mentor and talent. The past two years have been difficult for restaurants around the world, and I am thrilled to come together to celebrate our industry’s resilience and passion.”
“It’s a great honour for me to collaborate with not only my longtime friend but someone of Chef Marcus’ calibre,” says Chef Daniel Boulud. “While we both have individual cooking styles and draw on inspiration from different parts of the world, Marcus and I share the same passion for delivering unique and exceptional dining experiences.”
Bringing together both chefs' brigades from Montreal and Toronto, Jonathan Homier, Head Bartender of MARCUS and Mike Birdsey, Head Bartender of Café Boulud will also combine their talents to create innovative, hand-crafted cocktails for guests to enjoy upon arrival.
To begin the evening, the esteemed chefs will serve delicious canapés - inspired by Chef Marcus’ Ethiopian and Swedish roots and Chef Daniel’s French heritage. Following the hors d'oeuvres, a five-course culinary journey commences with the first course helmed by Chef Daniel featuring delicious Sesame-Crusted Beets with pickled turmeric, mustard seeds and tahini dressing. A Snow Crab Risotto with lion’s mane mushrooms and lime will then be delicately presented by Chef Marcus as the second course of the evening. The feast for the senses continues with Chef Marcus’ Grilled Japanese Medai followed by Chef Daniel’s Driview Farms Spring Lamb Chop. Finishing the evening on a high note, Café Boulud’s Pastry Chef Kevin Levionnois and both talented teams will surprise and delight all with two mouthwatering desserts.
Following dinner, the celebrations continue as guests make their way downstairs for the official after-party held at the property’s signature lounge, d|bar by Chef Daniel Boulud. As the clock strikes 10:00 pm, guests will be treated to the musical stylings of BELLOSOUND, surprise performances by the Montreal-based entertainment group Black Mohawk Productions, and specialty cocktails and light bites curated by both acclaimed chefs. Those unable to attend the collaboration dinner are encouraged to attend the official after-party.
Attendance at the d|bar after-party is on a first come first serve basis and while occupancy permits.
