AER at Four Season Hotel Mumbai Celebrates Negroni Week with Modern Indian Craft
AER, the iconic rooftop bar at Four Seasons Hotel Mumbai, marks the beginning of Negroni Week from September 22 through 28, 2026, with a menu that brings a contemporary Indian perspective to the classic Italian aperitivo. Through inventive techniques and original serves, the week explores how a familiar cocktail can be reinterpreted with modernity while remaining rooted in Indian craft.
Leading the menu are two original Negronis created at AER. Amaro Nero combines Buffalo Trace Bourbon, The Great Amaro Liqueur and bitters, rested overnight in an unsalted butter-seasoned earthen clay pot. Drawing from India’s clay-pot tradition, the technique softens the spirit while bringing forward notes of bitter-sweet orange, dark cacao and roasted almond. La Dolce Vita takes a lighter approach, combining Malfy Gin, Amaro Montenegro, Campari and cold brew coffee, finished with soda for a refreshing balance of citrus, bitterness and coffee.
“Across India, clay has long been part of our Indian heritage of how we preserve, enrich and transform flavours. This has inspired our Negroni Week menu, helping us to explore how a familiar technique could bring new depth to a classic. We wanted the menu to feel rooted in Indian craft while keeping the spirit of Negroni at its core,” says Sher Thakur, Director of Beverage, Four Seasons Hotel Mumbai.
The menu will also feature Negronis making their way from bars across Four Seasons in the region, including Copitas at Four Seasons Hotel Bengaluru and BKK Social Club at Four Seasons Hotel Bangkok at Chao Phraya River. Together, the selection offers guests a glimpse into the distinct interpretations being created across Four Seasons bars.
