Four Seasons Resort Orlando at Walt Disney World Resort has announced a new concept for its poolside casual restaurant, situated on floating lakeside pavilions. The Lakehouse is the new name for the restaurant, which originally opened in 2014 as PB&G. The breezy, open-air restaurant offers covered seating overlooking tranquil lake views, backdropped by lush Florida woodlands. With a menu centred on fresh seafood, salads, wood-grilled fare and modern American favourites, The Lakehouse captures the essence of coastal living through fresh flavours and effortless charm.
“I’m excited to infuse some new energy into this signature restaurant, which is a popular lunch spot for both guests and locals,” says Jennifer Rama, Director of Food and Beverage at Four Seasons Resort Orlando. “While a few favourites remain, the reimagined menu celebrates our connection to the surrounding nature preserve — an elevated expression of locally inspired coastal cuisine, refined seafood, and garden-driven cocktails that capture the essence of the setting and enhance the guest experience.”
Delight in diverse seafood dishes featuring cold-water lobster, diver scallops and Atlantic grouper balanced by vibrant Florida ingredients such as mango, key lime and heart of palm, with new menu items including Citrus Lobster Salad, Key Lime Scallop Ceviche, Hamachi Tartar and Crispy Conch Fritters. Alongside these lighter selections, The Lakehouse also offers satisfying classics including a Ground Brisket Burger, Free Range Rotisserie Chicken, and Creekstone Farms Steak Frites. Complementing the cuisine, the mixology program draws inspiration from the surrounding landscape. Mixologists craft botanical cocktails using freshly harvested herbs, ripe Florida fruits, and warm spices, creating drinks that mirror the natural beauty of the lakefront. Signature creations such as the Driftwood Banana Daiquiri and Chef’s Garden Mojito highlight a garden-to-glass philosophy.
The Lakehouse is helmed by Chef Jonathan Grossman, who joins Four Seasons from Topolino’s Terrace- Flavors of the Riviera at Disney’s Riviera Resort, where he served as sous chef. Grossman’s experience also includes serving as sous chef at Olivia’s Café at Disney’s Old Key West Resort, signature chef assistant at Golden Oak at Walt Disney World Resort, signature cook at Le Cellier Steakhouse at EPCOT, and more, with over a decade of progressive culinary leadership experience across fine dining, signature restaurants, and high-volume operations within Walt Disney World Resort. Grossman will work alongside Executive Chef Fabrizio Schenardi, who oversees all of the Resort’s culinary operations, including The Lakehouse, and the Resort’s other signature dining outlets including Michelin-starred Capa, Michelin-recommended Ravello, The Lobby Bar, and Plancha. “Chef Grossman brings a refined approach and respect for ingredients,” says Executive Chef Fabrizio Schenardi. “His vision pairs beautifully with our surroundings — it’s about letting the natural flavours of the ingredients shine.” Additionally, Bert Noury has been appointed as Restaurant Manager at The Lakehouse, joining the resort from the Ritz Carlton Grande Lakes. Noury is a Certified Level 3 Advanced Sommelier and Certified Mixologist.
