From oceanfront lunches on Florie’s Terrace to weekend dinners at Seaway and signature café moments, the season’s offerings celebrate vibrant coastal flavours, elevated craftsmanship, and Palm Beach’s unmistakable sense of place.
Seaside Dining at Seaway
Set directly on the ocean, Seaway serves as a relaxed gathering place from midday through evening, where the pace of dining follows the movement of the sun.
Lunch highlights vibrant coastal flavours with dishes such as the Signature Tuna and Salmon Chirashi, and Blackened Shrimp Tacos, both designed to feel fresh, balanced, and well-suited to the setting.
As the afternoon gives way to early evening, the Seaway Bar offers a concise cocktail program intended for easy transitions from beach to bar. Signature selections include the Endless Summer, crafted with Casamigos and Vida mezcals, watermelon-jalapeño, and lime, alongside the zero-proof Garden Party, blending Seedlip Garden 108, lavender, lime, tarragon, and club soda.
For the season, Seaway introduces dinner service on select Friday and Saturday evenings, presenting a Latin-inspired coastal steakhouse experience centred around a seeable dining-room grill. Highlights include the 28-ounce Creekstone Farm Tomahawk For Two with orange-smoked fingerling potatoes, watercress, and fleur de sel; Grilled Whole Lobster with jumbo lump crab, basil lemongrass, and coconut sauce; and South Florida Catch Zarandeado finished with red adobo, cilantro-mint pesto, pickled fennel salad, and charred lemon.
A signature cocktail, Sunset in Palm Beach, features Diplomatico Planas rum with pineapple, orange, lime, and cinnamon, is offered only during dinner service.

Taste of the Mediterranean at Florie’s
At Florie’s, the experience shifts with the light. Lunch is served on Florie’s Terrace Friday through Sunday, where a fresh, seasonal menu suits the ocean air and unhurried afternoons. Signature dishes include Florie’s Farm Salad with basil and pistachio hummus, pickled vegetables, crispy lemon, chickpeas, radicchio, local greens, and smoked citrus vinaigrette, alongside Pizza Fritta with mortadella, mozzarella, pistachio, and black truffle.
In the Dining Room, dinner is centred on refined seafood and produce, with standout offerings such as the Seafood Tower featuring oysters, stone crab, amberjack carpaccio, shrimp, lobster, and tuna, as well as the Beet and Celery Root Rémoulade with caper, walnut, and soft-boiled egg. The East Coast Queen Snapper arrives with Brussels sprouts fricassée, capers, mandarin, green olives, hazelnut, and vierge sauce, capturing the menu’s balance of brightness and depth.
Beginning February 19, 2026 Florie’s Bar will feature live music every Thursday evening, with a Cuban trio performing from 6:00 pm to 9:00 pm through Memorial Day weekend.
Valentine’s Day at Florie’s | February 14, 5:30 pm – 9:30 pm
For Valentine’s Day, Florie’s will offer a dedicated prix fixe dinner available in the Dining Room or in a private, ocean-facing cabana setting. Both experiences feature the same curated menu, allowing guests to choose between a classic restaurant atmosphere or a more intimate, romantic setting overlooking the Atlantic.
Menu highlights include a first-course selection of Smoked Mackerel with confit tomato coulis; Roasted Beetroot Salad with green apple and goat cheese; or Fennel and Celery Root Soup. An optional middle course of Homemade Pasta with parmesan cream and black truffle is also available. Entrées include Brioche-Crusted Madai with saffron beurre blanc; Dry-Aged New York Strip with truffle potato sarladaise; or Green Pea Risotto with crispy lemon and pecorino.

Galentine’s Mahjong at Florie’s Bar | February 12, 5:00 pm – 8:00 pm
Galentine’s Night at Florie’s Bar invites guests to gather for an evening of Mahjong, bubbles, and friendly competition, hosted by 3 Dragons Mahj. Designed for both beginners and seasoned players, the experience includes Mahjong 101 and guided instruction throughout the evening, along with a glass of prosecco, passed hors d’oeuvres, and chocolate-covered strawberries. One lucky guest will win a Day Spa Pool and Beach Retreat, complete with a Signature Massage, while all attendees will take home custom Mahjong tile–decorated cookies as a sweet keepsake. Guests dining at Florie’s that evening will also enjoy a complimentary dessert.
Cocoanut Café
Cocoanut Café offers a relaxed counterpoint to the resort’s dining program. Serving freshly baked pastries, signature beverages, and seasonal treats, it is a natural stop on the way to the beach or between moments on property.
