Florie’s Unveils Its New Seasonal Menu

Florie’s welcomes a new menu from Michelin-starred Chef Mauro Colagreco, artfully brought to life by Chef de Cuisine Diego Soriano. Each dish celebrates the beauty of seasonality and the coastal bounty of Palm Beach.

Among the standouts: the Roasted Squash Gratin, a comforting yet elevated ode to autumn; the Amberjack Carpaccio and Chilled Octopus Salad, each reflecting the purity of the sea; and the Florida Queen Snapper, a beloved local catch presented with Colagreco’s signature Mediterranean influences. Fresh, vibrant additions such as the Grilled Cucumber Salad balance indulgent favourites such as the Wagyu Beef Tenderloin, together reflecting Florie’s ingredient-driven cuisine and culinary artistry.

Café La Trova x Florie’s Bar Takeover

The spirit of Little Havana comes to Palm Beach as Florie’s Bar welcomes Café La Trova, ranked among North America’s 50 Best Bars and home to world-renowned cantinero (Cuban bartender) Julio Cabrera and James Beard Award-winning chef Michelle Bernstein.

Guests will experience the artistry and flair of La Trova’s bartenders as they craft signature Cuban cocktails, including the Daiquiri Clasico, Hotel Nacional, Presidente, and the La Trova Old Fashioned — each a masterclass in balance, history, and hospitality. This two-night takeover promises an atmosphere of vibrant energy, impeccable craftsmanship, and the timeless rhythm of Havana.

Four Hands Dinner: Florie’s x Stage Kitchen & Bar

A rare culinary experience unfolds as Chef Diego Soriano of Florie’s joins forces with Chef Pushkar Marathe of Stage Kitchen & Bar for an unforgettable five-course tasting experience that celebrates creativity, seasonality, and shared passion.

Guests will be treated to a journey of global flavours, beginning with Yellowfin Tuna Bombs and Ginger Persimmon Tartlets, followed by highlights such as Saffron-Goat Cheese Tortellini, Local Fish Pollichathu wrapped in banana leaf, and Lamb Saddle with kumquat, spinach farse, and fermented black garlic mousseline. The evening concludes with a Cardamom-Spiced Caraïbe Chocolate Cake and a sweet farewell of Saffron-Lychee Macarons. Priced at USD 175 per person; reservations made be made here.

A Coastal Thanksgiving at Florie’s

Gather with friends and loved ones for a decadent Thanksgiving celebration at Florie’s, where the warmth of the holiday meets the elegance of the coast. Guests will enjoy a lavish buffet filled with seasonal favourites and coastal flair, featuring an Ice Raw Bar and Seafood Display with Florida Stone Crabs, East Coast Oysters, Shrimp Cocktail, and Local Snapper Ceviche.

Traditional highlights include Joyce Farms Slow-Roasted Turkey with chestnut and thyme stuffing, sage gravy, and orange cranberry sauce, complemented by dishes such as Roasted Acorn Squash Salad, Butternut Squash and Apple Soup, and Coffee-Rubbed Dry Aged Rib Eye.

The celebration concludes with an abundant dessert display, from Classic Pumpkin Pie and Chocolate Pecan Pie to Vanilla Chai Crème Brûlée and 72% Dark Chocolate Profiteroles.
