Its delicate, melt-in-the-mouth shaved milk ice offers instant refreshment on hot, humid days. Dating back to the Joseon Dynasty, the dessert is also tied to Korea’s communal dining culture. Available at the Hotel’s laidback lobby lounge Maru, two signature bingsu creations are served with theatrical flair alongside condiments that allow guests to personalise the experience.
The Maru Classic Bingsu honours Korean dessert heritage through snow-fine organic milk ice, velvety premium Korean red bean paste, rice cake cubes and fresh pear spheres. Made using prized locally sourced beans celebrated for their nutty sweetness, smooth texture and cultural significance, the red bean paste brings both depth and nostalgia to the dessert. The pear component, with its delicate sweetness and refreshing juiciness, creates a bright contrast, leaving a clean, uplifting finish with every spoonful.
One of Korea’s most sought-after, luxury seasonal fruits – Jeju-grown apple mangoes – are enhanced with delicate pastry, elderflower and white chocolate in the Maru Jeju Apple Mango Bingsu. More than two rare Jeju apple mangoes, highly prized for their tree-ripened sweetness and smooth jelly-like texture, feature in each serving. At the dessert’s centre lies a mango sphere that bursts to release mango elderflower sauce; crafted using molecular gastronomy techniques, it’s designed as both visual spectacle and sensory surprise.

Launching June 1, 2026, the seasonal Gin & Tonic by Head Bartender Odd Strandbakken offers the ultimate cooling refreshment for sizzling summer evenings. Premium Korean gin is infused with delicate floral notes of rose, marigold and lemon balm and balanced by crisp tonic. Finished with a cloud of finely shaved, flash-frozen watermelon, the cocktail celebrates seasonal abundance in every sip.
