In Japan, festive cakes have become an integral part of year-end celebrations, often taking centre stage at the dinner table alongside the holiday feast. Embracing this tradition, Four Seasons Hotel Tokyo at Marunouchi presents two seasonal creations by Executive Pastry Chef Nicolas Maugard; Éclat de Noël, a snow-covered tree-shaped cake designed for sharing, and Matcha & Mikan Panettone, a Japanese interpretation of the traditional Italian sweet bread. Both creations will be available for takeaway from December 1 to 31, 2026, with reservations accepted from October 13.

Éclat de Noël: A Snow-Covered Tree Cake for the Festive Table

Inspired by a winter landscape, Éclat de Noël is shaped like a snow-covered fir tree, decorated with delicate stars, ornaments and silver leaves. Its white chocolate exterior gives the cake a smooth, pristine finish, making it an eye-catching centrepiece for festive gatherings.

Inside, a light mousse made with Madagascar vanilla is paired with yuzu confit from Kochi Prefecture. The vanilla provides a mellow, aromatic sweetness, while the yuzu adds a refreshing acidity that balances the richness of the mousse. A moist almond dacquoise introduces a gently toasted, nutty flavour, complemented by the delicate snap of the white chocolate coating.

Each slice reveals the contrast between the airy vanilla mousse, bright yuzu and soft almond sponge, offering a combination of flavours and textures designed to be enjoyed after a festive meal. Despite its elaborate appearance, the cake is light on the palate, with a clean citrus finish that makes it a refreshing alternative to richer holiday desserts.

Made without alcohol, Éclat de Noël is suitable for guests of all ages, making it an ideal dessert to share with family and friends during the holiday season.

Matcha & Mikan Panettone: A Japanese Interpretation of an Italian Holiday Tradition

A staple of Italian holiday celebrations, panettone is known for its tall, rounded shape, airy texture and rich, buttery flavour. Traditionally shared with family and friends or presented as a seasonal gift, it is a natural addition to the festive takeaway collection.

Chef Maugard's Matcha & Mikan Panettone combines traditional preparation methods with Japanese ingredients. Made with a starter matured for one month, each panettone undergoes a week-long preparation process before baking, allowing the dough to develop its characteristic texture and flavour.

Uji matcha is incorporated directly into the dough, giving it a vibrant green colour and a distinct earthy bitterness. Pieces of mikan confit are distributed throughout, adding bursts of sweet citrus flavour that complement the matcha. The panettone is finished with a dusting of icing sugar and matcha powder, creating a contrast of white and green across its surface.

The combination of matcha and mikan offers a balance of earthy, citrus and sweet notes, making the panettone particularly enjoyable with sparkling wine or espresso. Presented in a specially designed SÉZANNE gift box, it makes an elegant seasonal gift or a centrepiece for gatherings throughout December.
