Italy’s Spring Treat – White Asparagus
Every year, Four Seasons Hotel Hong Kong brings white asparagus from Bassano del Grappa, Veneto Italy, to The Lounge at Four Seasons Hotel Hong Kong.
Also known as “noble spears”, this nutrient-packed asparagus is the first sign of spring. They are grown underground and the lack of sun and chlorophyll gives the asparagus its signature white colour as well as a sweeter and milder flavour. A prized food in the 15th and 16th centuries for European nobility, today when spring time comes, it still stirs excitement with seasoned chefs and foodies around the world.
To announce the arrival of spring, The Lounge creates a special menu in to celebrate white asparagus season. It is believed that the ingredient is best poached or steamed to preserve its essential flavour.
Guests can enjoy this menu from April 3rd to 18th, 2019, where highlights include a cherry wood smoked risotto served with white and wild asparagus and sea urchin. The smoked rice combined with the sweetness of the asparagus and the creaminess of the sea urchin elevates the vegetable.
