Chef Luca Piscazzi’s trademark creativity once again finds its muse in locally sourced, often wild-harvested, seasonal ingredients: Cuttlefish complemented by piquant Ramsons, Ibérico Ham, Fresh Peas and Bergamot; White Asparagus Risotto accompanied by Clams, Coconut and Green Curry; Rabbit and Lobster with Aubergine, Sea Urchin and Bisque, and Golden Apple Tatin with Bergamot Caramel and Roasted Vanilla Foam.
