Italian Executive Chef Sebastiano Spriveri renews Aqua Restaurant's lunch and dinner menus blending seasonal local products with an Italian touch

After weeks of thinking, selecting and tasting dishes, the Aqua Restaurant kitchen team is excited to announce that new menus for both lunch and dinner are live. Having a charming terrace and unsurpassed Bosphorus view, Aqua Restaurant presents its new menus with selected dishes of Italian cuisine and offers once again recipes emphasising Italy’s classic and savoury flavours at Four Seasons Hotel Istanbul at the Bosphorus.

As always, Chef Sebastiano Spriveri focuses on healthy and light summer meals using seasonal local products. Not only the ingredients but also the cooking techniques are in line with healthy eating concept. With chilled options on the menu, Aqua’s summer dishes are ideal for the warmer weather. There are tasty dishes for vegetarians and for guests looking for gluten-free items. Special to this year's menus, guests will be able to enjoy a rich variety of grill items as well.

The antipasti section consists mainly of seasonal vegetables and seafood. However, one of the must-eat items of starters is beef carpaccio, which is among Chef’s specialties. Main courses include the most loved Italian classics, offering a wide range of homemade pasta and risotto. One of the signature dishes is Chef’s famous carnaroli risotto with seasonal vegetables.

For seafood lovers, both menus have a satisfying variety, including turbot, cod fish and sea bass. However, the menu is not limited to seafood and Aqua continues to offer tastebud-tantalising meat dishes such as lamb chops with aubergine, veal scaloppine with lemon sauce, or grilled 30 days dry aged rib of beef. For guests looking for a lighter option, roasted baby chicken is another highlight from Aqua’s summer creations. As always, state-of-art desserts from French Executive Pastry Chef Ghislain Gaille and the pastry team make a great ending to any lunch or dinner at Aqua.
