EDGE Steak & Bar at Four Seasons Hotel Miami Presents “Marcus Cooks” with Chef Marcus Samuelsson

At EDGE Steak & Bar, located within Four Seasons Hotel Miami, fun and flavour will fuse for Marcus Cooks: A Special Weekend Event. For two nights only, Marcus Samuelsson, six-time James Beard Award-winning chef, author, and TV personality, and Four Seasons Hotel Miami Executive Chef Aaron Brooks will come together to present a four-course tasting menu in an atmosphere that celebrates both food and culture.

As an acclaimed chef with Ethiopian-Swedish-Harlem roots and restaurants around the globe including MARCUS Montreal, Marcus B&P, and Miami’s very own Red Rooster Overtown, Chef Samuelsson’s adventurous spirit celebrates food, music, culture, and art throughout each culinary experience. Joining forces with Aussie native Chef Brooks, who opened the local favourite EDGE Steak & Bar, and who has orbited around cultures and cuisines, from pan-Asian to New England.  Passionate about his profession, he finds culinary inspiration from each destination, offering a sense of place with his cuisine. Since opening the restaurant, Chef Brooks has immersed himself in the Miami culinary scene and its Latin and Caribbean culture, bringing a unique take to his modern steakhouse.

As two distinguished chefs come together, diners can expect an eclectic four-course menu connecting Chef Samuelsson’s Ethiopian-Swedish-Harlem roots and adventurous spirit with EDGE Steak & Bar’s notable bold flavours.  The special menu includes:

  • First Course: R&R Salad (radicchio, romaine, miso caesar, injera), Poached Lobster (daikon, broken rice, coconut), or Tuna Toro Crudo (charred red pepper, tapenade, balsamic, fried parsley)
  • Second Course: Seared Scallop (shiitake, koji, golden milk), Oyster Risotto (uni, peas, fried chicken), or Duck, Pork and Foie Gras Terrine (roasted cherries and davidson plum conserva, frisée, truffle)
  • Third Course: Kobe Beef, Nebroni Mushroom, or Sea Bass Wellington (Key West pink shrimp, serrano ham, asparagus, trout roe butter)
  • Dessert Course:  Sweet Coconut (mango, passionfruit), Baked Alaska (chocolate, coconut) or Hazelnut and Lemon (praline crémeaux, meyer lemon sorbet, vanilla sable)

Complimenting the vibrant menu, beverage offerings include a welcome cocktail by Havana Club Rum along with a selection of signature cocktail and Black-owned wine. To set the scene, colourful and intricate African décor will be showcased while live entertainment with vivid sounds fills the air.

The special weekend event takes place on March 18 and 19, 2022 with reservations available from 6:00 to 10:00 pm. Price per person is USD 195. Reservations available by calling 305 381 3190 or via OpenTable.
