Bahía x Xokol: A Three-Night Culinary Takeover at Four Seasons Resort Peninsula Papagayo Blending Costa Rican and Mexican Traditions
This July, the flames rise, and tradition meets rebellion as Bahía at Four Seasons Resort Peninsula Papagayo welcomes the trailblazing Mexican culinary duo behind Xokol for a three-night gastronomic takeover that explores the ancestral language of maize, fire, and memory.
From July 23 to 25, 2025, diners will be immersed in a four course tasting experience curated by Xokol’s Chef Xrysw Ruelas and Chef Óscar Segundo, recognized by Latin America’s 50 Best for their radical and respectful approach to Mexican cuisine in collaboration with Bahía’s own Chef Heberto Mejía.
“At Bahía, our cuisine is born from the soul of Guanacaste,” says Chef Heberto. “We’re deeply inspired by the Chorotega legacy and Costa Rica’s indigenous culinary roots. Collaborating with Xokol is a natural evolution - a meeting of two fire-forward cuisines that share the same cultural heartbeat.”
Together, the chefs reimagine ancestral techniques - fermentations, wood-fired cooking, ash curing, and clay pot slow roasting - using endemic ingredients like maíz pujagua, pejibaye, ayote, chile criollo, and native herbs. Each dish is a story of their lands using maíz as language and fire as translator.
Complementing the menu are six exclusive cocktails, crafted by Bahía’s mixology team. The drink list channels Costa Rican and Mexican traditions through modern eyes: think tepache redux, sende-infused highballs, and cocktails enhanced by wild herbs, toasted spices, and earthy tones of roasted agave and tropical fruits.
