Rooted in the flavours of the Levant and shaped by the culinary traditions of the broader Mediterranean and North Africa, Chef Khaled Natour brings a vibrant blend of heritage and innovation to Virador. His approach balances nostalgia with contemporary technique, celebrating the dishes of his upbringing while embracing Costa Rica’s fresh ingredients and relaxed coastal energy.
“My cooking is a blend of memory, technique, and travel,” says Chef Natour. “At Virador Beach Club, I honour my Arab and Mediterranean roots while incorporating the freshness of Costa Rica to create dishes that tell a story.”
This menu highlights several signature dishes that reflect this cross-cultural inspiration that Chef Natour brings. The Kofta Bel Forn, a comforting recipe passed down through generations in Chef Natour’s family, features seasoned beef baked with tomatoes and warm spices, reimagined with contemporary elegance. The Snapper Marrakech brings together smoky grilled fish, North African spices, aromatic couscous, cranberries, and tahini — a vibrant interpretation of Morocco’s coastal cuisine. Returning to the menu is the beloved Hummus Shawarma, known for its rich Mediterranean spices and creamy texture, a long-standing favourite at the Beach Club.
Complementing the culinary offering, Virador Beach Club reintroduces Sol de Fuego, its iconic weekly sunset ritual.
