From November 8 to December 8, 2024, Four Seasons hotels across the Asia Pacific invite guests on a culinary journey with the "Hidden Tastes" menu, where 13 renowned chefs from different Chinese restaurants have crafted an exclusive experience combining traditional classics with inventive flavours. This unique offering showcases the essence of Chinese culinary artistry.

At Saai Yue Heen, Four Seasons Hotel Dalian, Chinese Executive Chef Hu Jinxian has thoughtfully curated a selection of seasonal dishes inspired by the richness of local seafood and traditional Chinese cooking techniques. With a focus on the freshest ingredients and balanced flavours, each dish honours the heritage of Chinese cuisine while celebrating Chef Hu’s creativity and dedication to craftsmanship.

"Dalian diners have a profound connection to seafood, and through the Hidden menu, we aim to create memorable dining experiences that blend authenticity with a modern sensibility," says Chef Hu. "Our menu this season highlights the diversity of Chinese cooking while infusing it with our own vision of contemporary flavour - a true culinary journey."

Signature dishes include the Salt-Baked Flame-Grilled Dalian Sea Conch, which uses a salt-baking technique rooted in Hakka traditions to bring out the natural umami of fresh sea conch from Dalian. The Crystal Chicken with Fresh Abalone reimagines classic Cantonese crystal chicken, enhanced with premium Dalian abalone delicately steamed inside to lock in tenderness and moisture.

From refined appetizers to classic slow-cooked specialties, each dish on the Hidden menu represents a harmonious blend of flavour and texture, offering a true celebration of Chinese gastronomy. Four Seasons Hotel Dalian warmly invites guests to savour these one-of-a-kind creations and enjoy an unforgettable taste of the season’s finest.
