This summer, MINA Brasserie at Four Seasons Hotel Dubai International Financial Centre welcomes guests to bask in the golden glow of the season with the launch of the Summer Edition of its Chef’s Specials starting July, 2025. Featuring a vibrant and seasonal showcase of enticing dishes, the menu has been thoughtfully curated to encapsulate the warmth and brightness of the season, alongside a sparkling selection of limited-edition highball cocktails, designed to chase the Mediterranean sun from dawn to dusk.

The experience begins a refreshing Chicory Salad – mixed bitter greens are paired with pear, candied walnuts, pomegranate jewels, feta cheese and tossed in a ginger dressing. Traditional Andaluz Gazpacho comes to life with pickled pearl onions, roasted red pepper, green apples and drizzled with basil oil.

The Prawn Burger is the perfect light summer indulgence, crusted with panko crumbs and layered with chipotle slaw and pickles, whilst the Grilled Picanha is perfectly tender with a rich deep flavour, served with Hokkaido pumpkin, black garlic aioli and garlic crumbs.

“Every dish here is a summer story, but the Grilled Picanha is the one I’d sneak off to eat myself. It’s smoky, rich, and just light enough to not feel guilty after eating it” shares Executive Chef Rami Nasser.

Complementing the new seasonal dishes, MINA Brasserie invites guests to chase the sun with their new highball collection of cocktails, offered also as mocktails, and available until the end of August. The First Light greets the senses with rum infused with delicate coconut & lemongrass cordial, topped with a zesty sparkle of pink grapefruit soda - evoking the crisp freshness of dawn. As the morning sun ascends Morning Radiance shines with a 12-Year-Old whisky, infused with yuzu cordial, cranberry juice, and a splash of ginger beer, embodying the invigorating energy of morning light.

At High Noon tequila reposado is mingled with ripe mango and fiery touch of chili and topped with grapefruit soda – mirroring the suns vibrant intensity at its peak. As daylight softens Golden Hour blends vodka with kiwi and lychee, gently carbonated to reflect the warm, glowing hues of sunset’s approach. The Final Ember evokes the last warmth of dusk, with gin stirred with peach, elderflower, and Indian tonic – soothing, mellow, and evocative.

This summer, the chic Michelin-selected brasserie embraces the beauty of the season with sun-drenched flavours, cooling cocktails and vibrant dishes, setting the tone for ultimate long leisurely lunches, golden hour gatherings and starlit soirees.
