The modern brasserie at Four Seasons Hotel DIFC celebrates truffle harvest with limited-edition dishes inspired by the terroir of Northern Italy

As autumn descends upon the forests of Piedmont, the white truffle emerges: a fleeting treasure shaped by soil, climate, and time. At MINA Brasserie, the modern brasserie at Four Seasons Hotel Dubai International Financial Centre, Executive Chef Rami Nasser and Chef de Cuisine Kevin Vieira capture this rare moment through a menu that honours the ingredient’s natural character and its earthy origins. Available from November 10 to December 2, 2025, the seasonal selection reveals the truffle’s complexity through refined brasserie interpretations.

“White truffle carries the soul of its land,” says Chef Rami Nasser. “Each dish is composed to preserve that connection, its aroma, its fleeting presence, and the sense of terroir that makes it unlike anything else.” The journey begins with a Truffle Sourdough appetizer, where fresh sourdough is infused with white truffles. For starters, guests can enjoy Œuf aux Truffes, made with poached eggs, wild mushroom duxelles, aged parmesan sauce, truffle jus, and roasted macadamias.

For main courses, pasta lovers will enjoy the Truffle Tagliolini, fresh ribbons of pasta enveloped in an indulgent, creamy parmesan truffle sauce. Seafood aficionados will relish the succulent Hokkaido Scallop and Spot Prawns, paired with a roasted cauliflower purée and delicate truffle bisque foam. The juicy Wagyu Fillet is served with nutty Jerusalem artichoke, pearl onions, fresh garden cress, and topped with a truffle jus. Each MINA Brasserie main course pairs perfectly with the Asparagus and Hollandaise side, elevated with a truffle béarnaise.

To conclude the journey, MINA Brasserie presents the decadent Truffle Gavotte dessert, crafted with rich dark chocolate espuma, indulgent truffle fondant, tangy mandarin confit, and finished with candied cocoa nibs.
