Hubert Gallo is the Restaurant Manager of Michelin-selected MINA Brasserie, led by award-winning Chef Michael Mina, and the modern, chic Penrose Lounge at Four Seasons Hotel Dubai International Financial Centre. With a deep-seated passion for hospitality, Hubert revels in the dynamic nature of his role, where each day brings new people, challenges, and opportunities.

Hubert's vision for MINA Brasserie and Penrose Lounge centres on elevating service and introducing innovative elements to both establishments. He holds the belief that hospitality is fundamentally about building strong relationships, and he leverages his extensive industry connections to help the restaurants thrive.

 Originally from Monaco, Hubert's hospitality journey began early, influenced by the welcoming nature of his homeland. He pursued internships in Monaco and Beijing before venturing to Shanghai. A former competitive skier, Hubert draws parallels between skiing and his career, emphasizing the importance of preparation and training during slower periods to excel during peak seasons.

Hubert takes great pride in MINA Brasserie's elevated dining experience, featuring high-quality food and a lush, garden-like terrace. In collaboration with his team, he introduced a new à la carte breakfast menu, catering to diverse tastes with Arabic options, healthy choices, and indulgent sweet treats. Additionally, Hubert and Executive Chef Rami Nasser launched a bar bites menu for guests to enjoy alongside their drinks.

Hubert believes Penrose Lounge offers an inviting atmosphere for both business and lifestyle guests. He played a key role in launching a new afternoon tea concept, revitalizing this cherished Dubai tradition with innovative offerings. Additionally, he introduced summer-perfect iced teas in matcha and raspberry flavours. Recognizing the lounge's diverse clientele, Hubert aims to showcase Penrose Lounge's exceptional cocktail selection and 0% ABV non-alcoholic beverages, ensuring all guests enjoy a sophisticated experience.

Hubert's illustrious career includes significant roles at prestigious establishments. He spent three years at Four Seasons Hong Kong, completing an 18-month corporate training program. Following this, Hubert was promoted to Assistant Manager at Caprice, a 3-Michelin-star, 5-Forbes-star restaurant. In 2020, Hubert moved to Dubai to work with Jumeirah Al Naseem, serving as Outlet Manager at Summersalt Beach Club. Transitioning from a restaurant to a beach club allowed Hubert to learn new aspects of the industry. In July 2022, he was recognized in Caterer Middle East’s "30 Under 30” list. By August 2023, Hubert had joined One&Only Za’abeel, where he contributed to the pre-opening team and launched the glamorous poolside restaurant and day club, Tapasake.

Soon after, he saw an opportunity at the award-winning MINA Brasserie and eagerly rejoined the Four Seasons family, where his career began, feeling as though he had returned home.

He deeply values the culture at Four Seasons, where continuous growth and mutual support are core principles. He envisions a bright future for MINA Brasserie and Penrose Lounge, eager to develop and elevate these establishments while staying ahead in Dubai's dynamic culinary scene and on a global scale.
