Martin Ubertas is the General Manager of Luna Dubai and Churchill Club at Four Seasons Hotel Dubai International Financial Centre. With more than 14 years of experience spanning Europe and the UAE, Martin has shaken and stirred his way to becoming a true connoisseur of hospitality. His career is built on connection, community and a deep-rooted passion for the art of bartending.

Born in Slovakia, Martin’s hospitality journey began with a rigorous hotel management internship, where he first dipped his toes into the world of mixology. It wasn’t quite love at first shake, but it wasn’t long before he found his passion. "It was like discovering a whole new world," Martin recalls. “The challenge, the creativity, the chance to connect with people, it all just clicked." This spark led him to travel across Europe, absorbing everything he could from some of the best bars and restaurants the continent had to offer. For Martin, bartending quickly became more than a job, it became a lifestyle.

After completing his studies, Martin made the bold move to London, despite having never set foot on a plane before. “I didn’t know the city, didn’t know the scene, but I knew I had to be there,” he says. He landed his first role at Hakkasan Mayfair, one of the busiest bars in the UK, which he describes as “a true baptism by fire,” but it set the foundation for his expertise under pressure. From there, his career whisked him away to some of the world’s most prestigious venues, including spots in Madrid, Mykonos, Hokkaido, and Dubai.

"People don’t remember the drink, they remember how they felt," says Martin, summing up his philosophy on hospitality. Whether it’s a celebration, a quiet moment, or a first date, Martin believes that the magic of bartending lies in the connections you make. His warm, personable nature ensures that everyone who steps into his venues feels at home. "The drink is just the beginning," he smiles. "It’s about making people feel like they belong, whether they’re here for five minutes or five hours."  It’s this philosophy that drives him daily at Luna Dubai and Churchill Club, fostering community, elevating the ordinary and creating spaces where people can just be.

Martin approaches the beverage and entertainment programs at Luna Dubai and Churchill Club with a thoughtful mix of local influences and global trends. "I love research, it’s like finding new flavours in an old cocktail. You never stop learning." His goal is always to craft menus that tell a story, infusing each drink with an element of surprise and playfulness. "It’s not just about a good drink; it’s about an experience. I want every guest to feel like they’ve just discovered something new and exciting."

Martin’s leadership is defined by intention, empathy and a genuine respect for collaboration. He fosters a team-driven environment where everyone works in harmony to deliver exceptional service. "It’s like mixing the perfect drink, each person brings their own flavour, but it’s the teamwork that creates something truly special." His team looks to him for guidance, as his calm, supportive leadership style creates a space where everyone can thrive.

And if Martin were a drink? “Definitely a Negroni—equal parts strong, bitter and sweet.” A classic blend with a modern edge. Just like him.
