Set against a city skyline shaped by the Pearl River and Canton Tower, Yu Yue Heen, the Michelin one-star restaurant on the 71st floor of Four Seasons Hotel Guangzhou, reopens following a complete transformation of both its space and its cuisine. Anchored in Cantonese cuisine, the Restaurant weaves together design, terroir and cultural imagery, translating the culinary heritage of Lingnan into a contemporary expression of taste.

A Stage Suspended Above the City

Conceived by the internationally acclaimed design studio AB Concept, the interiors of Yu Yue Heen draw from the rhythm, gesture and emotional tension of Cantonese Opera, translating tradition into a concise yet expressive spatial language.

The main dining room unfolds in an open yet ordered composition. The gentle curves inherent in the form of a jade pendant are reinterpreted as glass screens with a subtle grain, each pane delicately framed in metal, the surface breaking light into gentle ripples that shimmer beneath the stage lights. Lacquered panels, patterned glass and silk-textured walls overlap under restrained lighting, laying out a rich yet understated texture, like a set quietly awaiting its curtain to rise. Material, scale and light together extend the expressive aura of Cantonese Opera, while the shifting city beyond the windows becomes the natural backdrop for this stage in the sky, the calm within echoing the pulse of Guangzhou.

Beyond the main dining room, six private rooms each shaped around the character and ceremonial dress of a different operatic role, while their names reference the landscape and identity of Guangzhou. From the composed lines of "Yue Jun" to the warm elegance of "Yue Ya" and "Yue Xiu," the design echoes the varied spirits of Sheng roles (male roles in Cantonese Opera) and Dan roles (female roles in Cantonese Opera) through the interplay of hard and soft materials and the modulation of light and shade. Stepping inside, you feel as though you are moving through the quiet backstage of different productions, encountering the delicate textures of Lingnan culture between intimacy and openness.

The Rhythm on the Plate

On stage, material and light set the order; on the plate, ingredient and heat answer in flavour. Yu Yue Heen translates the rhythm and expressiveness of Cantonese Opera into the rises and falls, restraint and release, and pauses of its Cantonese cuisine, extending the space's visual order into taste. The Restaurant reconsiders traditional flavour presentation while honouring Cantonese cuisine's attention to ingredient essence, heat precision and textural layering.

The menu follows this rhythm. Signature “Fresh&Savory” Soup, drawing on the Shunde technique of deboning fish, hand-shredded fish meets seasonal melons, fruits, mushrooms and bamboo shoots, letting fish, vegetables and broth interweave in clear yet rich warmth. White Sugar Cake Topped with Crispy Pork Slices, the soft and chewy Shunde rice cake, offsets the richness of marbled pork, bringing together crispness, chewiness and savoury aroma in harmony. Baby Lobster in Garlic Cream Sauce draws the sweetness of lobster and dairy richness into one structure. Chinese Yam and Lotus Seed Sweet Soup with Fragrant Lemon closes with the clarity and moisture of Lingnan sweet soups, leaving a lingering finish between mildness and freshness.

From sourcing to cooking, from umami to texture, each dish continues the measured aesthetic of Cantonese cuisine, letting the rises and falls of Cantonese Opera find another response on the plate.

Chinese Terroir in Dialogue with Cantonese Cuisine

Beyond the flavours on the plate, wine and tea extend the experience at Yu Yue Heen. The wine list brings together fine wines from Chinese terroirs, from Ningxia to Shangri-La, their regional conditions and winemaking styles echoing the freshness and delicate heat of Cantonese cuisine. The tea list offers selected Chinese teas, whose aroma and sweet aftertaste modulate the palate and create moments of pause throughout the meal.
