Autumn Seasonal Recommendations at Michelin-Starred Song

Song, the one-Michelin-starred Chinese Restaurant on the 8th floor of the hotel, has launched a new autumn seasonal menu. Led by Executive Chinese Chef Neal Zeng, the menu features seasonal ingredients such as Zhoushan tiger shrimp, Qianjiang rice fish and Fenghua taro. Using modern culinary techniques to reimagine the flavours of Ningbo, it creates a golden autumn feast themed Harvest from Mountains and Seas, Tastes of Ningbo.​

The Double-boiled Fish Maw Soup, with pork tripe, ginkgo, and almond juice, is slow-cooked to achieve a milky white and mild broth, embodying the elegance of autumn nourishment. Braised Tiger Prawns with garlic chili sauce uses local tiger shrimps with firm texture, enhanced by litsea cubeba oil and celery, and braised using traditional methods to release a rich aroma. Sour Soup with steamed egg, fish maw, and swimming crab meat is exquisitely prepared: a smooth egg custard steamed with Guizhou red sour soup serves as the base, topped with hand-picked whole white crab meat and fish maw, then drizzled with bright sour soup. The combination of crab freshness, fish maw tenderness, egg smoothness and soup richness creates a splendid autumn flavour feast. Braised Water Caltrop Kerne, with Chinese chives, and water Chestnuts uses seasonal water chestnuts, slow-braised with seasonal vegetables, fruits and a light soy sauce aroma, preserving the sweet and glutinous taste of water chestnuts and full of Jiangnan autumn vibes. It is available, a la carte, from September 15 to December 14, 2025.​

Autumn Afternoon Tea: ​The Golden Paper Dream, Autumn Elegant Gathering

This autumn, The Lounge has collaborated with the local master of intangible cultural heritage of paper quilling to present the Golden Paper Dream, Autumn Elegant Gathering – an autumn themed afternoon tea. It creatively combines the exquisite folding art of paper quilling with autumn scenery, initiating an elegant dialogue between art and taste.​

Sweet osmanthus conveys autumn charm through rolled paper, and autumn chrysanthemums take shape in layered paper folds. Every fold carries the warmth from the craftsman’s fingertips, condensing poetry on the tea table. Savoury snacks follow the seasons: dried tomatoes hold the misty rain of Jiangnan, while truffle mushrooms hide the autumn charm of mountains and forests. Sweet treats embody artistic conception: caramel chestnuts take on the gradual colors of autumn, and honey jelly cakes hold the joy of harvest. Baristas have created a special Youth Journey osmanthus series, weaving a taste journey with aroma. Whether enjoying alone or with others, guests can encounter the elegant dialogue between intangible cultural heritage craftsmanship and the changing seasons. The afternoon tea for two is at RMB 628+ 15 percent per set, available from September 1 to November 30, 2025.​
