Billy Xu is the Executive Pastry Chef at Four Seasons Hotel Hangzhou at Hangzhou Centre. Under his exquisite craftsmanship and creativity, desserts are more than just delicious; they are expressions of love for life and art.

Billy's career began in 2017 when he was hired by Four Seasons Hotel Guangzhou as a pastry supervisor. His outstanding talent and diligent work quickly made him stand out, and he was promoted to pastry sous chef. During this time, he earned the Hotel's Best Supervisor of the Year award, which not only affirmed his work but also motivated him to pursue excellence continuously.

With the support of Four Seasons, Billy had the opportunity to participate in domestic and international dessert competitions, winning multiple awards. He won second place in the China Pastry Cup, a bronze medal in the sugar showpiece project at FHA Singapore, and a silver medal in the chocolate project at IKA Germany. To further enhance his skills, he was also sent to two Four Seasons hotels in Singapore for learning and exchange. Four Seasons places great importance on employee growth and learning, significantly advancing Billy's career.

Billy's professional experience is extensive. He has held significant positions at Peninsula Hotel Beijing, The Londoner Macao, Shangri-La Hotel Guangzhou, and Pudong Shangri-La Hotel Shanghai. These experiences have given him a broader perspective and a deep foundation in dessert making.

Born in Huai'an, Jiangsu, Billy had a strong interest in food from a young age. He graduated from Huangshan University with a degree in Culinary Arts and Nutrition and is fluent in Mandarin and English, enabling him to showcase his talents on an international stage.

Besides creating desserts, Billy is passionate about fitness. Fitness not only keeps him in good physical shape but also inspires many of his dessert creations. Feeling the power and rhythm of the body during exercise often gives him new insights into the structure and texture of desserts.

As an expert in chocolate sculpture art, Billy has unique insights and skills in this area. During a relaxing moment after a workout, he once thought of using chocolate sculpture to represent the power and beauty of movement. With his exquisite craftsmanship, he carves chocolate into various dynamic forms, showcasing the tightness and streamline akin to muscles. Each chocolate sculpture piece is not only a visual feast but also a perfect interpretation of strength and art.

Billy's creations are mostly inspired by the beautiful things and urban elements in real life. Whether it's the scenery of streets and alleys or the lines of buildings, they can all become sources of inspiration for his desserts.
