A protégé of Javier De Las Muelas, master behind Barcelona’s acclaimed Dry Martini Bar, William blends refined aesthetics with innovative vision, reimagining classic cocktails in ways that both surprise and captivate.

His creations are often rooted in cultural heritage, transforming taste into narrative. In 2023, he introduced a cocktail series inspired by the traditional Chinese Twenty-Four Solar Terms — each drink a liquid canvas evoking the essence of each season, gracefully merging Eastern and Western influences.

To William, ingredients are more than flavour — they are vessels of inspiration. Following an immersive assignment at award-winning Charles H Bar in Four Seasons Hotel Seoul, he embraced the brand's commitment to sustainability, pioneering the From Kitchen to Bar initiative that incorporates culinary techniques and molecular mixology. He further unveiled a contemporary Chinese cocktail menu cantered around Rice, artfully paired with signature dishes from One-Michelin-Starred Jin Sha.

Now, at Stars, the hotel’s rooftop bar and social destination, William channels the soul of an astronomer and the heart of a poet. His new signature menu unfolds in three chapters: Diviner, drawing inspiration from global stargazing destinations; Star Gazer, reinterpreting classics with new dimension; and Astrologer, offering bespoke cocktails guided by zodiac signs. Each creation invites guests on a celestial journey from twilight’s first glow to a tapestry of constellations where flavour, story, and the cityscape unite in elegant harmony.
