Dat Vo’s journey to becoming Head Baker at Four Seasons Resort The Nam Hai is as thoughtfully layered as the pastries he crafts. Originally pursuing a degree in engineering and construction, he was drawn instead to the world of aesthetics and visual storytelling. This creative pull eventually led him to make a bold pivot into the culinary arts, where he discovered a deeper passion for pastry. As he describes it, “Pastry allowed me to merge structure with creativity—it became my canvas.”
Seeking to refine his skills in a professional kitchen, Dat moved to Phu Quoc, immersing himself in an international culinary environment under the guidance of globally trained chefs. It was here that his fascination with chocolate artistry began to take shape. Specializing in chocolate graphics, he found the perfect medium to unite technical precision with his design sensibility.
In 2024, Dat returned to his hometown to join the pastry team at Four Seasons Resort The Nam Hai. His imaginative masterpieces not only dazzle visually but also pay homage to Vietnamese heritage. With a passion to celebrate Vietnamese culture through food, he uses ingredients such as ripe bananas, coconut, mango, and glutinous rice—flavours that evoke the land and memory. Classic sweets such as bánh da lợn and xôi dẻo often make quiet appearances in his modern creations, reinterpreted but never forgotten. “Guests travel to connect with culture,” he says. “Through my pastries, I want them to taste Vietnam.”
Dat describes himself as responsible, a problem-solver, and someone who simplifies complexity—an ethos that carries into his leadership style. Warm and collaborative, he nurtures talent within his team and fosters a shared sense of creativity, discipline, and pride in service.
Outside of the kitchen, Dat is an adventurer at heart. His ideal weekend is a family road trip to Huế, cruising along the Hai Van Pass in his camper, windows down, ocean breeze in the air. With more than 88,000 TikTok followers, he also documents his adventures—from behind-the-scenes pastry prep to bike rides and family picnics—blending the life of a chef with that of a storyteller.
In every layer, every line, every flavour, Dat is building something lasting. Not just pastries, but moments, memories, and a movement to show that Vietnam’s culinary artistry can stand proudly on the global stage.
