The Land of Spice: Four Seasons Hotel Jakarta Showcases Acehnese Flavours in Third Chapter of Peranakan Culinary Series
The culinary journey through Nusantara continues at Palm Court at Four Seasons Hotel Jakarta. In the third chapter of its acclaimed Peranakan Culinary Series, the restaurant unveils the bold flavours of Acehnese cuisine from North Sumatra. Available until September 30, 2025, “The Land of Spice” menu introduces diners to the region’s rich, complex flavours through a selection of authentic dishes.
The vibrant legacy of Peranakan cuisine weaves together influences from Sumatra, Java, India, Malaysia, China and the Arab world. “This culinary series reflects the incredible diversity of Indonesia and the interconnected history of our region. Each dish tells a story of flavours passed down through generations,” explains Executive Sous Chef Asep Hamdani of Palm Court.
The Land of Spice
Poised at the tip of North Sumatra, Aceh’s strategic location made it a key maritime hub for centuries. With extensive trade networks came new spices and ingredients, which merged with local traditions to create a unique culinary identity. Reflecting the region’s cultural tapestry, traditional Acehnese dishes are known for their bold flavours, aromatic spices, and balance of tastes — sweet, sour, savoury and spicy.
Offering a delectable insight into Aceh’s culinary heritage, Chef Asep presents Sie Reuboh, a signature specialty of braised beef in spicy sour sauce, with a dash of palm vinegar lending a distinctive Acehnese tang. Crafted with premium Australian beef, the dish comes with authentic Acehnese sides and condiments.
As part of the vibrant feast, guests can look forward to sampling the standout Sambal Ganja or Sambal Udeung, a sour shrimp sambal named for its addictive (but narcotic-free!) taste, and Nasi Gurih, steamed rice cooked in coconut milk and spices. Kerupuk Mulieng crackers lend a satisfying crunch, while the Gule Rampoe soup showcases Aceh’s diverse produce — think sweet corn, chayote, long bean, cassava leaf, young jackfruit and more.
The meal is paired with Iced Le Boh, a refreshing traditional beverage made with cucumber, citrus and basil seeds.
