For Enrico Zambi, food has always been a family affair. His earliest memories are of cooking alongside his grandmother in his native home in Italy, crafting dishes for family festivities. “I vividly remember her guiding my hands as we made fresh pasta together,” he says. “Those moments, filled with warmth and tradition, are memories I will cherish forever.”
These formative experiences sparked a lifelong love affair with gastronomy — and a stellar career that has taken Zambi around the globe. From Canada to Qatar, Switzerland to Sydney, he has earned renown for a culinary style that fuses deep-rooted heritage with vibrant curiosity. Following a gastronomy qualification in Italy, Zambi went on to shape the cuisine of standout venues including Doha’s Scalini Restaurant, Italy’s Hotel Acquario, and Four Seasons Hotel Sydney.
Drawing on this tapestry of global influences, Zambi crafts dishes defined by elegant simplicity, layered flavour, and a strong sense of story. “I find joy in celebrating traditional dishes and highlighting what makes them special — all through simple, authentic preparations,” he says. “My goal is to create happiness by using the finest ingredients to craft memorable meals that honour heritage and delight the palate.”
This goal finds its fullest expression in Zambi’s role at Dai Forni, the acclaimed Italian restaurant at Four Seasons Hotel Kuwait. Framed by a vibrant atmosphere and panoramic views, Zambi’s contemporary interpretations of fine Italian cuisine are precise, elegant, and deeply emotional.
