Christmas Eve Dinner at Culina

Celebrate Christmas Eve at Culina with new holiday specials crafted by Executive Chef Mitch Austin. Menu specials include an antipasti of roasted beef bone marrow with carmelized onions, salsa verde, and grilled sourdough and a primi of cavatelli pasta with fennel sausage and wild mushroom ragu, pecorino cheese, and black winter truffle. Secondi selections include roasted Colorado lamb chop with parsnip puree and pan roasted john dory with delicata, beluga lentils and caulini. The dessert special features chestnut mousseline with smoked chocolate ganache, and candied marron to finish the special meal.

Enjoy an all-day, buffet style Christmas Brunch at Culina prepared by Executive Chef Mitch Austin and the Hotel culinary team. Traditional breakfast favourites include made to order omelets, traditional and smoked salmon eggs benedict, applewood smoked bacon, fresh waffles, cheese blintzes, and fried Jidori chicken oysters. Seafood and sushi options include Alaskan king crab legs, steamed mussels, fresh shucked oysters, and more, with fresh farmers market salads, artisan cheeses, and mini quiches available throughout the day. “Christmas in Chinatown” will begin after 1:00 pm with Peking duck carved to order, crispy spring rolls, and veggie fried rice. A traditional carving station will also be available featuring Buffalo-style hot turkey wings and fried turkey legs, cinnamon honey glazed ham, roasted prime rib, and carved leg of lamb. Culina pizzas and other classics including organic king salmon, seared stripe bass, Jidori chicken roulade, braised short ribs, and more will also be available. Make sure to also save room for dessert with casis fabri cherry financier, pistachio caramel loaf chocolate bûche de Noël, fresh made donuts, Christmas cookies, gelato, sorbet, and more.

Ring in the New Year in style with an expertly crafted menu specials by Executive Chef Mitch Austin. Specials include a crudi of diver scallop with roasted corn emulsion and a primi of seasonal squash agnolotti with sage and sourdough crumbs. Two secondi specials will be featured including a seared sea bass with roasted sunchoke and chanterelle mushrooms and braised short ribs with soft taleggio cheese polenta. For dessert, enjoy a chocolate peanut firecracker with dark chocolate flourless cake, peanut praline crémeux and peanut mousse or strawberries with champagne granita.

Enjoy New Year’s Day Brunch at Culina prepared by Executive Chef Mitch Austin including traditional brunch favourites omelets made to order, Belgium waffles, traditional eggs benedict, ricotta cheese blintzes, honey fried Jidori chicken oysters, and more. Special hot entrees include seafood bouillabaisse, beef stir-fry, tempura cauliflower, Jidori boneless fried chicken, and prosciutto mac and cheese. A chef selection of fresh pizzas will also be available as well as a Mexican station with quesadillas, menudo, and mini breakfast burritos as well as a carving station with bone-in ribeye steak, skirt steak, beer can chicken, and beef ribs. A selection of salads, seafood and sushi, cheeses, fresh fruit, agua frescas, and wellness shots will be available with dessert options including fresh donuts and crepes, and an assorted of hazelnut tarts, caramel banana bread puddings, strawberry parfaits, chocolate mousse cakes, and peanut butter brownies.
