Four Seasons Resort and Residences Los Cabos at Costa Palmas Announces New Executive Chef, Paolo Della Corte
Four Seasons Resort and Residences Los Cabos at Costa Palmas has appointed a new Executive Chef, Paolo Della Corte, to oversee all aspects of its Food and Beverage program, which includes nine different dining and drinking experiences within the Resort’s footprint, in addition to a robust banquets and events operation.
Originally from a city near Naples and the Amalfi Coast in Italy, Chef Paolo brings with him a world-class pedigree shaped by years of experience in some of Europe’s most prestigious Michelin-starred kitchens, alongside some of the most iconic culinary figures in the world. From 3-Michelin stars with Heston Blumenthal at The Fat Duck in London, and Joël Robuchon’s 2-Michelin starred L’Atelier Saint-Germain in Paris, to 2-Michelin stars at Rossellinis at Palazzo Avino in his hometown, and 2-Michelin starred La Torre del Sarracino with Chef Gennaro Esposito, Chef Paolo is well-poised to bring epicurean magic to the East Cape of Los Cabos.

Most recently, Chef Paolo served as Executive Chef at NOBU Hotel Los Cabos where he honed his craft in blending refined culinary techniques with bold, local ingredients to create exceptional dining experiences that celebrate the natural beauty of Baja California.
Chef Paolo will oversee a dynamic array of food and beverage experiences at Four Seasons Los Cabos at Costa Palmas including world-renowned estiatorio Milos, al fresco dinner favourite Limón, Baja-style brasserie Casa de Brasa, cevicheria and sushi counter El Puesto, and the smallest restaurant in Los Cabos, Zest. With only one table, and one seating per night, Zest is located in the chef’s private garden and delivers an exceptional nine-course dinner that takes guests through Chef Paolo’s personal journey with every bite.
