Four Seasons Resort and Residences Los Cabos at Costa Palmas, the award-winning resort situated within the distinguished community of Costa Palmas on the East Cape of Los Cabos, is proud to introduce The Tasting Table at Costa Palmas, a destination-driven dining series launching on August 30, 2025. Designed as a chef-curated, progressive journey, The Tasting Table invites guests to explore distinct dishes representing each of the resort’s 12 restaurants over one unforgettable dinner, showcasing ingredients sourced directly from the surrounding region — from fresh seafood and heirloom vegetables to wild herbs and sustainably raised meats.

This exciting announcement follows the recent appointment of Executive Chef Paolo Della Corte, whose culinary pedigree includes tenures at several Michelin-starred restaurants across Europe such as The Fat Duck in London, Joël Robuchon’s  L’Atelier Saint-Germain in Paris, Rossellinis at Palazzo Avino in Amalfi Coast, among others. His expertise in European cuisine brings a refined eye to The Tasting Table’s menu curation, and his arrival marks a dynamic new chapter for the resort’s already exceptional food and beverage program.

Through The Tasting Table, we’re looking forward to welcoming guests to form new connections and build a sense of community centred on authentic flavours and shared meals that bring people together.”

The inaugural Tasting Table event will take place on Saturday, August 30, from 6:30 pm to 9:30 pm, set amidst lemon groves at the Resort’s acclaimed restaurant, Limón. Guests will be welcomed with a bespoke welcome cocktail before enjoying an intimate, open-air dinner including standout dishes such as:

  • Dungeness crab and bluefin tuna toro tartare tostada seasoned with salt-cured egg yolk umami, black truffle, and sea urchin aioli
  • Baja chocolate clams with “salsa al ajillo”
  • Almond hummus with onion ash, fresh black truffle and dry fruit bread
  • Grilled yellowtail nicoise salad featuring freshly gardened vegetables, basil, and lemon vinaigrette
  • Chuck short rib glazed with mosto de uva, raisins, parsnips, fresh endives, and jocoque
  • Mango ceviche with cilantro, lemon juice, and tajín

Wine pairings from award-winning sommelier, Victor Itza Pacheco, is available to complement the epicurean journey through the dynamic dining options within the Costa Palmas community.

The Tasting Table allows guests to explore the full range of the resort’s culinary offerings in one exceptional evening, including Delphine, the East Cape’s first and only beach club by Michelin-starred Chef Ludo Lefebvre, serving beachfront meals throughout the day, vibrant cocktails, and daily entertainment as well as the newly introduced Zest, the smallest restaurant in Los Cabos featuring an intimate chef-curated nine-course dinner hosted at a single table. Just steps away from the resort’s rooms and suites are seven additional drinking and dining experiences, such as world-renowned Mediterranean restaurant estiatorio Milos by Chef Costas Spiliadis; Casa de Brasa, honouring Mexican heritage through land, sea and corn; the poolside cevicheria and sushi bar, El Puesto; and Ginger’s, an eclectic wellness café, among others.

By way of water taxi through the resort’s exclusive Four Seasons Marina, guests can enjoy an authentic Italian dining experience at Mozza Baja at Costa Palmas, helmed by James Beard Foundation Award winner, author, and restauranteur Nancy Silverton. The vibrant Marina Village also features Chiki, the East Cape’s private nightclub and lounge and designed by Martin Brudnizki, and Casena, a locally inspired cafe and boutique offering a hand-selected collection of home goods, artisanal goods, coffees, and pantry staples.

Complementing these culinary experiences are the resort’s world-class amenities, which span expansive pools, private beaches, the Robert Trent Jones II-designed Costa Palmas Golf Club, fitness facilities, racquet courts, and the award-winning Oasis Spa and Wellness Centre.  Four Seasons Resort Los Cabos at Costa Palmas also invites visitors to take part in its semi-private jet service in partnership with Aero. Following the in-flight journey, guests will be transported to the property via a private SUV and receive a nightly credit that varies based on accommodation type.
