A Starlit Culinary Affair: Chef Grace Choy Brings Award-winning Cantonese Cuisine to Four Seasons Resort Maldives at Kuda Huraa

This spring, Four Seasons Resort Maldives at Kuda Huraa welcomes renowned Hong Kong chef Grace Choy for an exclusive two-week residency. From April 1 to 15, 2025, the award-winning chef will be harnessing Kuda Huraa’s ocean bounty in sensational Cantonese dishes - served under the stars at Pool Island.

Inspired by her motto that “you can take culinary inspiration from any little thing in the world,” Chef Grace will be showcasing the passionate creativity that put her first restaurant on the map as one of CNN's “Hong Kong's 10 Best Private Kitchens.” Celebrated for her artful storytelling through food, she’s renowned for transforming humble ingredients into exquisite, flavour-packed creations.

Kuda Huraa guests can immerse in an intimate dining experience inspired by her four-seat Tokyo restaurant, ChoyChoy Private Kitchen - only this time in the open air, where the ocean breeze meets the warm glow of torchlight.

Chef Grace’s specially curated residency menu features a harmonious balance of tradition and innovation, with highlights including her famed Hong Kong-style char siu, double-boiled dried cabbage and fig soup, fresh-caught Maldivian seafood, and delicate handcrafted desserts - all perfectly paired with a 1998 Ripe Pu'er Lao Cha Tou (old tea).

Beyond the dining table, guests can also delve into the culinary philosophy of this self-professed "humble countrywoman” through intimate cookery classes. A Maldivian fishing excursion using traditional handline techniques culminates in the unique chance to cook their own catch guided by Chef Grace. Both experiences are available on a first-come, first-served basis.
