Chef Sergio Favata brings his authentic Italian heritage to Acquapazza at Four Seasons Resort Mauritius at Anahita. He redefines the traditional trattoria experience by blending Italian charm with the elegance of a dining experience at the water's edge of the resort. His vision is to create a social and interactive culinary experience where family, friends, and food lovers come together to share in the spirit of Italian hospitality.

With more than 18 years of culinary expertise, he careered at some of the most prestigious kitchens in the world such as Al Duca in London and the Michelin-starred Locanda Locatelli. At Four Seasons Astir Palace Hotel Athens, Chef Sergio Favata earned acclaim for his signature dishes, such as his famous 100-layer lasagna and focaccia inspired by his grandmother.

At Acquapazza, Chef Sergio Favata brings his passion for traditional Italian cuisine, inspired his nonna’s cuisine, to life. He combines classic Italian recipes with a modern twist, using fresh, locally sourced ingredients from Mauritius. “The surroundings, the sea, the local food, and the culture inspire me to create a beautiful blend,” he says. At Acquapazza, guests experience the communal spirit of Italy’s trattorias while savouring dishes that celebrate both Italian roots and Mauritian influences.

When not in the kitchen, Chef Sergio is known for his dynamic lifestyle. He enjoys fishing, kickboxing, and cooking for his family, especially his son. At Acquapazza, his social nature shines through as he cultivates a lively, interactive atmosphere reminiscent of his home country.
