Set against a shimmering Barachois lagoon backdrop at Four Seasons Resort Mauritius at Anahita, Angara invites guests into a vibrant Indian culinary journey where fire, flavour and culture come to life.
The name Angara, meaning “fire” in Hindi and Sanskrit, lies at the heart of the restaurant’s identity. In Indian tradition, it is associated with Agni, the god of fire, symbolising energy, transformation and strength. This spirit is reflected throughout the experience — dynamic, theatrical and deeply immersive — where cuisine is brought to life through flame and emotion.
At the center of Angara is the live tandoor, where chefs work with intensity and precision, transforming ingredients through fire and spice. Glowing embers, smoky aromas and vibrant flavours create a sensory journey that is both bold and deeply rooted in tradition.
From the very first moment, the experience is guided by ritual. Guests are welcomed with a bindi, delicately placed on the forehead—a gesture symbolising blessing, protection and presence. It is a quiet and meaningful introduction, grounding each guest before the journey begins.
Then comes a defining moment of the evening. Chef Saravana Bhagavath joins guests at the table inviting them to take part in a playful game of destiny. He holds a coin with two engravings: the lotus, the national flower of India and the Maharaja’s bust. Together, they flip the coin—allowing fate to decide on the experience. One side reveals a refined, modern interpretation of Indian cuisine, while the other leads to a celebration of time-honoured recipes, rich in heritage and deeply rooted in India’s culinary soul.
For those who prefer to follow their own path, guests are equally invited to choose their preferred journey, with menus thoughtfully designed to include rich vegetarian options and diverse flavours for every palate.
Inspired by the philosophy of karma, this ritual transforms dining into something deeply personal. Every moment becomes part of a story — where choice, chance and intention intertwine, and where each guest shapes their own experience.
Guided by this philosophy, Chef Saravana brings his culinary vision to life through menus that celebrate the richness and diversity of Indian cuisine. Blending authentic flavours with modern artistry, his approach reflects both heritage and innovation, creating dishes that are bold, expressive and refined.
At Angara, the experience unfolds through shared moments — from fire-kissed tandoori creations to curated feasts such as the Maharaja Thali, where colours, aromas and textures converge on a single plate. By incorporating seasonal Mauritian ingredients, each dish gains a distinctive sense of place while remaining deeply connected to its origins.
As Chef Saravana Bhagavath explains: “Every dish should be a celebration, awakening the senses through culinary mastery and a thoughtful fusion of spices — a tribute to the heritage of Indian cuisine.”
At Angara, dining becomes more than a meal — it becomes an expression of fire, ritual and destiny, where flavour meets storytelling, and where every experience is shaped — whether by fate or by choice.
